In August, the apple tree overwhelmed us with apples; we didn’t even know what to do with them. I pressed the cider and decided to cook cucumbers in apple juice for the winter. I pressed a lot of juice, enough for cider and cucumbers. I read different recipes and chose, in my opinion, the most successful ones. I suggest you try them out.
Cooking cucumbers without sterilization in apple juice
In the morning I collected fresh ones in the greenhouse cucumbers, just Hermann I was pleased with beautiful, even 12 cm cucumbers. Hermann pickles always taste great.Even though the greens were just from the garden, I still put them in a basin and filled them with cold water. They lay in my water for at least 2 hours.
She walked through the garden and picked leaves from currants and cherries. You need a little per jar - 2-3 currants, 1-2 cherry. I looked into the garden and found a couple of dill umbrellas. I had to get another basin. I always soak greens in 2-3 waters before eating. There is dirt and dust on the leaves, although it is not visible.
Juice
I had already prepared 1.5 liters of juice the day before and stood in the refrigerator. I squeezed the apples using a regular garden juicer, then strained them through cheesecloth. It stood in the refrigerator, the remaining pulp settled to the bottom, and the juice became clear, like a tear. It took about 4 kg of apples to prepare the juice. The figure is approximate, because the volume depends on the juiciness of the fruit.
Tara
I like to pickle cucumbers in apple juice in large-necked jars. Convenient to wash, convenient to arrange cucumbers and spices. Any pickled vegetables look very appetizing in wide-necked jars. To prevent my jar from exploding with my cucumbers in winter, I sterilize it.
Now that everyone has a microwave oven in their kitchen, there is no point in bothering with sterilizing jars in the oven or steaming. I pour 0.5 cups of water into a jar washed with soda, put it in the microwave, and turn on the oven for 5 minutes. The sterile jar is ready.
Preparing cucumbers
I rinse the cucumbers, wash them with a sponge, wash them diligently, I don’t spare my hands because I’m afraid of botulism. I put clean, shiny cucumbers on a large dish to wrap around. I fill the kettle full of water and turn it on.
I take a jar out of the microwave and some greens from the basin - currants, cherry leaves and dill umbrellas. I shake the greens and put one part in a jar, leaving the second for the top.
I cut off the ends of the cucumbers and put the cucumbers in a jar. I prefer to place them vertically. The jar looks beautiful and more greens come in with this method of laying.
The jar is full, the kettle is boiling. I pour boiling water into the jar and cover it with the previously boiled lid. While the cucumbers are warming up, I make the marinade.
Making apple juice marinade
I take the apple juice out of the refrigerator, pour it into a saucepan, and put it on the stove. Add 1 tablespoon of sugar and salt to the marinade. My apples are very sweet, so 1 tbsp sugar. l. For sour fruits, you can increase the amount of sugar to 2 tbsp. l.
Remove the boiled marinade from the stove and pour 1 dessert spoon of apple cider vinegar into it. I pour the water out of the jar of cucumbers, pour the boiling marinade into it, and screw on the lid. The preparation for the winter is almost ready, all that remains is to put it under a fur coat. Under the fur coat, the cucumbers will stand in apple juice until they cool completely (1-2 days). I will store the workpiece in the cellar.
Recipe for cucumbers in apple juice with sterilization
I don’t like canning with sterilization, but I decided to try this recipe because I squeezed out a lot of apple juice and needed to use it urgently. The salting process was not difficult.
It took a little more than a kilogram of greens (1.2 kg), and exactly 1 liter of juice was needed. For seasonings, I took a few cloves and peppercorns. I picked two currant leaves and one dill umbrella.
I have already described the preparation of cucumbers and jars above. The marinade is prepared in the same way as in the previous recipe, with one exception - I do not use vinegar. I added only 1 tbsp to the juice. l salt and boiled.
I placed herbs, seasonings and cucumbers in a sterile jar and poured boiling marinade over everything.I sterilized a jar of cucumbers covered with a sterile lid for 15 minutes, rolled it up and put it under a fur coat for 2 days.
Conclusion
