Let the pate cool slightly in the pan, then carefully remove it and leave to cool on a wire rack. To serve, cut the pate into pieces and serve with red or green currants, crispy toast and fresh herbs.

Clean the burbot and cut into portions. Fry the pieces in vegetable oil until crispy. At the same time, simmer onion rings and carrots with spices and a spoonful of sour cream.
