- Pink Isabella is like a fruit, it is not eaten, but it is used to create drinks on an industrial scale;
- Taifi - large berries, rich in juice, fleshy, with high sugar content; well suited for creating alcoholic drinks;
- Pink Haze is a variety that is highly sweet, transports well, but often becomes prey for wasps and bees;
- Pink peach - with a sugar content of 23 percent, ripens early, the fruits are large, the variety is frost-resistant.
How to make wine from pink grapes at home
To prepare the drink, you will need to follow the recipe. There are several ways to help you create high-quality alcohol yourself.
Classic recipe
We will prepare the drink according to the following recipe:
- Chop the grapes, crush the berries to get juice, add water (depending on the amount of juice).
- Add sugar to everything and mix thoroughly with a wooden spoon or washed hand.
- Place the container in a room with a stable temperature, cover the neck with gauze.
- After a few days (5-7), when the active fermentation phase is completed, drain the mash, remove the pulp, and add more sugar.
- We equip the container with a water seal or a glove with a hole in the finger, and wait for fermentation to complete.
- We remove the mash from the remainder, filter it and pour it into a container that is specially prepared for this, close it with a tight lid.
- Keep alcohol in a cool and dark room for 3 months; aged wine is better in all respects.
Option using yeast
We add yeast to speed up the fermentation process; it can be live yeast - unwashed raisins.
If you want to use yeast, add it to the mash and first dissolve it in warm water. This mash will ferment faster and more actively, but the drink will have a peculiar flavor from the yeast.
From Isabella grapes
When using this variety, pay attention to the amount of sugar. You can follow the classic recipe, but add more sugar to the mash.
Attention! If 5 kilograms of grapes usually require 2.5 kilograms of sugar, then the amount is increased to 3.
Recipe breakdown:
- the berries are crushed and placed in a fermentation container (about a bucket of grapes is required);
- covered with sugar and left in the container until the active phase of fermentation is completed;
- then the pulp is removed, squeezed out, the product is not filtered, sugar is added, everything is thoroughly mixed so that it dissolves;
- the wine begins to ferment again, this process will go slowly, taking several weeks/months. A water seal will help you understand that fermentation has completed;
- when fermentation is complete, the product is removed from the sediment, filtered and poured into containers with a tight lid;
- for about 2 more months the wine will “acquire” its taste and aroma, it will become lighter and acquire the necessary characteristics.
Attention! When the drink ferments, it is better to keep it in a warm place; the room temperature should be stable and not fall below 18 degrees.
Storage rules
It is better to store the drink in a cool, dark place. Temperature fluctuations can ruin the characteristics of a wine.
During the aging process, when the product “gains” aroma and taste, it should be kept in a cellar or underground.
How to drink rose wine correctly?
The drink is poured into a suitable glass and allowed to sit for a few minutes. Drink it cold, in small sips, to feel its taste and aroma.
