A lot of spices, hot peppers and herbs are used to prepare Armenian snacks. You can prepare preserves from any vegetables: tomatoes, zucchini, eggplant. Even plums and cherry plums are suitable for cooking.
Preparing the main ingredients
Before cooking, all vegetables are thoroughly washed and chopped. If there are spicy herbs, they are finely chopped. It is better to use fresh herbs, but dried ones are also suitable.

Armenian winter snack
What you need for preservation:
- 2 kg of tomatoes;
- 2 carrots;
- 300 g plums;
- 1 bell pepper;
- 4 garlic heads;
- 1chili;
- khmeli-suneli;
- Bay leaf;
- 2 tbsp. l. salt;
- 4 tbsp. l. Sahara;
- 285 ml oil.
Grind the vegetables and plums in a blender. Finely chop the garlic. Place the vegetable mixture in a saucepan and cook until boiling. Then add sugar, butter, spices and garlic. Add salt. Boil for another 45-55 minutes. Transfer the dish into containers and roll up.
With zucchini
What you will need to prepare:
- 1 kg of zucchini;
- 1 kg of tomatoes;
- 1 kg of eggplants;
- 2 onions;
- 1 garlic head;
- add salt to taste;
- 2 tbsp. l. granulated sugar;
- 100 ml oil;
- dill.
Cut zucchini and eggplant into slices. Chop the tomatoes into cubes. Cut the onion into half rings. Eggplants are soaked in salted water before cooking. Then put all the vegetables in a saucepan and boil for about 1 hour after boiling. Add salt. At the end, add chopped dill, butter, sugar and pepper.
With cherry plum
In Armenian cuisine there is a recipe for a snack with cherry plum.
Ingredients:
- 2 sweet peppers;
- 300 g cherry plum;
- 3 large tomatoes;
- 2 onions;
- 1 carrot;
- 2 garlic cloves;
- 100 ml apple cider vinegar;
- 50 g sugar;
- add salt to taste.
Pour boiling water over the tomatoes and cherry plums to remove the skins.Cut the tomatoes into slices, grind the cherry plum to puree. Cut all other vegetables into cubes. Oil, vinegar and salt are mixed separately. Pour marinade into vegetable mixture. Mix all ingredients and cook for 40 minutes.
With eggplants and onions
Ingredients:
- 1 kg of eggplants;
- 3 sour apples;
- 5 medium-sized sweet peppers;
- 3 onions;
- 2 garlic heads;
- Chile;
- 4st. l. granulated sugar;
- 185 ml oil.
Chop the onion into rings and chop all other vegetables in a blender. Place all ingredients in a saucepan, add butter and sugar. Bring the appetizer to a boil, then reduce the heat and simmer for 35 minutes. A few minutes before it's ready, add the garlic.
With pepper
What you will need:
- 3 kg of sweet pepper;
- 2 chili pods;
- 10 g peppercorns;
- sugar and salt to taste;
- 2 tbsp. l. vinegar;
- 1 liter of tomato paste or juice.
Remove seeds from the pepper and cut into thin slices. Cut the chili into slices. Place everything in a saucepan, add peppercorns and pour in tomato sauce. Add sugar and salt. Cook for 45 minutes over medium heat. At the end of cooking, add vinegar.
Tomatoes in Armenian
Ingredients:
- 3 kg of tomatoes;
- 1 head of cabbage;
- 4 bell peppers;
- 1 carrot;
- 1 chili;
- 1 liter of filtered water;
- horseradish;
- granulated sugar;
- salt;
- fresh cilantro.
Finely chop the cabbage, add salt and mash with your hands. Cut the pepper into thin slices. Grate the carrots. Grind the garlic and chili, chop the cilantro. Cut out the core of the tomatoes, fill them with the vegetable mixture, and transfer to jars. Boil the brine and pour over the tomatoes.
Armenian cucumbers
What you will need:
- 2 kg of cucumbers;
- 2 liters of tomato juice;
- hot peppers;
- 1 garlic head;
- salt and granulated sugar;
- 30 ml vinegar.
Cut the cucumbers into large cubes. Grind the garlic and pepper in a blender, add to tomato juice, and stir.Add sugar and stir thoroughly again. Add salt. Place the cucumbers in jars, add juice, place them in boiling water for 20 minutes, then add vinegar. Roll up the cans.
With apples
Ingredients:
- 2 kg of eggplants;
- 3 sour apples;
- 2 sweet peppers;
- 1 kg of onion;
- garlic;
- hot chili;
- salt;
- granulated sugar;
- vegetable oil.
Cut eggplants into slices, apples into cubes. Chop the onion into thin half rings. Mix all ingredients, simmer over low heat for 45 minutes. A few minutes before readiness, add granulated sugar and butter. Add salt. Sterilize the jars, lay out the finished snack and close the lids.
With parsley
Parsley can be added to any Armenian twist recipes. You need to add the parsley a few minutes before the end of cooking so that it is not boiled in the finished product. It is best to use fresh parsley, but dried will also work.
Storage time and rules
You can store the preserves in the cellar or in the refrigerator. The shelf life is up to 2 years if the jars have been sterilized.
