You can choose any white rice - depending on what you like best. Some people prefer “short”, but you will need a little more of it than “long”.   • carrots (1 kilogram);
  • tomatoes (3 kilograms);
  • sweet pepper (1 kilogram);
  • onion (1 kilogram).

The vegetables listed above are the most likely to be found in Russian cuisine (only cucumber will overtake them). It is not surprising that a recipe with such simple and cheap ingredients quickly became popular among the people. The measure will be a three-liter jar. You will need one glass of rice (it should already be soaked by the time you start cooking), and as additional ingredients:

  • 100 grams of sugar;
  • 100 milliliters of vinegar;
  • two tablespoons of salt;
  • 400 grams of vegetable oil.

Once the rice is ready, it’s time for the vegetables. Everything is cut into small pieces that can easily fit and mix in a jar. The pepper is cut into strips, the onion into small cubes. Carrots can be grated on a coarse grater.Tomatoes are needed for a separate preparation - you will have to grind them to a puree (the easiest way to do this is with a meat grinder), and when ready, add all the salt, butter and sugar, mixing thoroughly.

Heat the tomato paste over medium heat, adding vegetables only after boiling. After this, you will have to wait for the whole vegetable mixture to boil a second time - now you can throw in the rice, which will simmer along with the vegetables for half an hour. Five minutes before the end of time, add vinegar and stir.

Vinegar is an acquired taste; not everyone likes its taste. It plays an important role in the preservation process, but you can do without it by processing the products more thoroughly.

In the same way, chop the peppers, carrots and onions, simmer them in a frying pan together for about half an hour, after which chopped tomatoes and rice are added. When the rice is ready, you can remove the appetizer from the stove and roll it up.

From the new one you will need hot red pepper, about two pods. Since there will be no preservation itself, the ingredients must be steamed very carefully. The tomato just won’t work anymore - it needs to be cooked until it becomes a paste for about 40 minutes, and then for the same amount of time, adding the rest of the already fried vegetables. The rice should be cooked separately at this time - it will take half an hour. The final stage is to add rice and spices to the sauce and cook for another 10 minutes.

Lecho is a spicy vegetable snack that rice will not spoil in any way. Almost no different from the standard recipe, except for the presence of pepper, garlic and spices to suit the housewife’s taste (basil, bay leaf, mustard or paprika).

The cooking recipe is similar to the classic one, only 7-10 minutes after the start of cooking, not only other vegetables, but also spices are added to the sauce. There is no need to boil the rice completely - let it simmer in the vegetable mixture for just 20 minutes.

Green tomatoes are edible anyway, but in jars they will ripen, soak in vegetable juice and vinegar, and become much tastier. The addition of spices will result in a savory and original snack that is least reminiscent of pilaf. To create it, just replace regular tomatoes with green ones.

Is it possible to replace tomatoes with paste? It is possible, but you will need a lot of it if we are talking about several banks. This is significantly more expensive than just three kilograms of tomatoes, but if you prefer the taste of a certain brand of tomato paste, just simmer it until it boils and follow the classic recipe.

Eggplants are very popular and affordable vegetables; it would be strange not to find a variation of the recipe with them. With the addition of eggplants, other vegetables are not removed, but the proportions shift slightly. Now you need 2.5 kilograms of tomatoes, and 1.5 kilograms of eggplants. Otherwise everything remains unchanged.

Beans are very nutritious, so you only need 200 grams for the recipe, due to which the amount of carrots is reduced to 0.8 kilograms. Beans also need to be soaked, but less than rice - only an hour.Beans, like rice, in this recipe need to be cooked a little until almost ready and only then thrown into the sauce, where fresh garlic and other vegetables have already been added.

If there is a special grater on which you can grate carrots using the Korean “folk” method, then this option is worth trying. You will also need garlic, a lot of spices and pepper, vinegar - so that the appetizer tastes like the famous salad. You need 2.5 kilograms of tomatoes, 1.5 kilograms of carrots. Vinegar is added five minutes before turning off the stove, everything else remains unchanged - and the delicious snack is ready.

The meat is cooked separately and only in the last 20 minutes of cooking is the sauce thrown in to soak it in. The weight of the meat can be arbitrary, but it is important to coordinate it with the weight of the vegetables so that there is enough space in the jar.

Mushrooms are combined with vegetables; in such a mixed recipe there is almost no difference between them. You can cut them into four slices (or six if the mushrooms are large) and feel free to throw them into the sauce along with the rest of the vegetables. Boiling with tomatoes will quickly saturate their porous bodies with vegetable juice.

How much and how to store?

You can store a snack rolled up in a sterilized jar with vinegar for at least years in a row. You will have to look after the rest and, perhaps, make mistakes, gaining experience and throwing away the spoiled ones.

Store in the same way as all preserved foods - avoid direct sunlight, pressure and temperature changes.
