How to make hawthorn wine at home
Yeast or raisins are added to enhance fermentation. It is important to follow consistency in any recipe. Alas, if the house or apartment is cold, the drink will not work. For its fermentation and infusion, a fairly high room temperature is required at all times.
Simple recipe
The simplest recipe is available to novice winemakers.No specific knowledge is required, and the result is almost 100 percent guaranteed. Taken:
- 5 kilograms of hawthorn;
- 10 liters of water;
- 10 grams of wine yeast - can be bought in specialized stores;
- 4 kilograms of white sugar.
First, prepare the syrup: sugar is mixed with water, heated, and boiled until thick. Hawthorn berries are placed on the bottom of the container and poured with hot syrup. The yeast is prepared, diluted with water, as stated in the instructions for use. Wait a few minutes and add them to the main mass.
The jar is closed with a water seal and left alone for three days. Next, drain the wort and add half the sugar. Again, they wait a week and repeat the procedure. The drink will be ready in 1.5 months.
Option without yeast
Yeast gives confidence that the wine will turn out, but its taste is not always felt. Those who are afraid that there will be a hoppy aroma can try making a drink from:
- 200 grams of hawthorn;
- 5 plant flowers;
- 1 liter of red wine;
- 70 grams of natural flower honey.
The berries are washed and dried. Add warm wine, honey, hawthorn to one container and simply send it to ferment in a warm place for three weeks.
Be sure to filter after this period and pour into jars.
With apples
The apple drink tastes very much like mulled wine. You will need to take:
- 2 liters of water;
- 100 grams of late variety apples;
- 1.5 kg of sugar (if the apples are unsweetened, you can take more);
- 1 kilogram of hawthorn.
Apples are crushed in any convenient way - in a meat grinder, on a grater, in a blender. Mix applesauce with berries and add a liter of water. Place in a warm place for three days, then filter and add sugar.
After 4 days, 200 ml of wort is drained, mixed with 400 g of sugar, left for three days, then the procedure is repeated again.
With grapes
To prepare this drink you will need:
- 4 kg granulated sugar;
- 5 kg of hawthorn;
- 10 liters of water;
- 200 g raisins.
Mix raisins, sugar and water and leave in a warm place for 4 days. The fact that the starter is ready can be seen by vigorous fermentation and the formation of thick foam.
Sugar is dissolved in water and the mixture is poured over hawthorn. Add starter and leave for three days. Then mix 1 liter of wort with an identical volume of sugar, return it, and leave for three days. The procedure is repeated two more times.
With chokeberry
They take;
- 2.5 kg of hawthorn;
- 3 kg sugar;
- 1 kg of rowan;
- 100 g raisins;
- 6 liters of water.
In general, the recipe is identical to the previous one. To obtain the aroma, rowan must be mashed.
With lemons and oranges
For 1 kg of the main ingredient you need:
- 0.6 kg of oranges;
- 2 kg sugar;
- 0.4 kg lemons;
- raisin.
Sourdough is done as standard. Lemons and oranges are added at the second stage of preparation (when the hawthorn is mixed with the starter and left to ferment).
