Making wine from grape leaves at home using a simple recipe is the best way to quickly and without much difficulty prepare a delicious drink. Even a novice housewife can cope with the recipes. Naturally, to make the wine rich and aromatic, you need to select high-quality raw materials.
Features of making wine from grape leaves
In the fall, the harvest is harvested, and, of course, a lot of fruits and vegetables are collected.Dry shoots are cut off for winter and simply thrown away or burned. Few summer residents collect grapevines and make delicious wine from them - they just don’t know that this is possible. In fact, from the remains of a plant that has already outlived its usefulness, you can make an aromatic alcoholic drink of pink, white color, and if you try, even sparkling champagne.
In order to prepare wine, you will need to take a special dry container (of course, it must be thoroughly washed beforehand).
You can take a three-liter bottle - this is the standard option.
The raw materials are vines and leaves collected in the fall. There is no need to wash them, but you should pour boiling water over them. The grapevine, harvested in the fall, is dried, the wine from it will be aromatic, but it will not ferment much. But if you make it from vines collected in the spring, you will notice that the drink will be made quickly, it will quickly act on people.
The main additions to wine are yeast, raisins or ammonia. They act as catalysts for natural processes.
Product benefits
Homemade alcohol in small doses is good for health. Most doctors talk about the following positive properties:
- decreased blood pressure;
- improved sleep;
- relieving anxiety symptoms;
- release of endorphins;
- elimination of cardiovascular diseases;
- prevention of Alzheimer's disease.
It is recommended to drink up to 50 milliliters per day. If more, it will lead to the development of alcohol dependence. But, it is clear that the bottle will not remain empty at a banquet or holiday table. Homemade wine, compared to average-quality store-bought wine, is more natural and will not cause unpleasant symptoms of hangover in the morning.
How to make wine from grape leaves at home
Those who have their own vineyards can make wine from grape leaves and vines. But you can buy these ingredients from summer residents, but in this case you cannot be sure when they were collected, or whether the plant has been treated with chemicals.
White wine recipe without yeast
You will need to take:
- 10 liters of spring water;
- 2 kilograms of grape vines and leaves;
- 1 kilogram of granulated sugar;
- a glass of light raisins.
First you need to boil all the water in a separate container. Place the main ingredients previously scalded in boiling water. Boiling water should cover the entire surface of the plants, leaving no dry areas. Remove from heat and place in a thick, warm towel in the kitchen for three days.
After three days, open the container. The wort should acquire a brownish tint and taste sour. If this happens, the wort is filtered, the vines and leaves are thrown away, and the drink is poured into a clean jar. If this does not happen, then wait another day.
Now you need to add granulated sugar. Take 1 kilogram per 10 liters of composition. But, alas, it is impossible to accurately indicate the volume, since each vine is individual. The finished sugar level should not be less than 21 percent - check with a hydrometer.
Add raisins and ammonia to the drink. Place the jar in a warm place, making sure it gets light. Strong fermentation will be noticeable within a day. Constantly check your sugar level - it should not decrease. If this happens, then add more granulated sugar.
You can tell that the wine is ready when the foam subsides and the color changes to darker. Usually you need to wait at least a week.
The wine is bottled. Seal tightly. Gases are sometimes released. Ready to drink when it becomes completely transparent (but there will be a cloudy sediment of wort at the bottom).
Pink drink
Taken:
- 10 liters of water;
- 2 kg of vines and leaves;
- 2 kg raspberries;
- 1 kg sugar;
- 150 g raisins;
- 3 g of ammonia.
The vine and leaves are thrown into boiling water, the resulting mixture is wrapped and left for three days. Cover the raspberries with sugar, add water and leave for a day. Mix the ingredients (remove all ingredients that are not suitable for drinking first), add the remaining ingredients. Leave to ferment in a warm and bright place. Sugar levels should not fall below 21 degrees.
A sparkling wine
To prepare champagne take:
- 12 liters of water;
- 2 kg of vines and leaves;
- 2.5 kg crushed grapes;
- 4 tablespoons of yeast.
The plant is evaporated with boiling water, wrapped and left for 3 days. Pour into a jar for fermentation, put on a glove with punctures. Leave in a warm place. After 6 days, strain, add grapes, yeast and sugar. Leave to ferment in a warm place for a month. After checking the sugar level (at least 21 degrees), pour into jars. The composition will be ready in 4 months.
Storage periods and rules
White and rose wine can be stored for up to six months; champagne is best kept for 8-12 months. Do not place it on cement (a wooden surface is better).
