Compote according to this recipe is prepared very quickly - about 30 minutes. The berries must be sorted, placed in a colander and rinsed with cold water.After that, place them in a pasteurized container, pour boiling water over it and leave for 30 minutes.
Pour the steamed berries along with water into a saucepan and place over low heat. Add granulated sugar and cook for 10 minutes, stirring regularly. Pour the resulting compote into a jar and roll up the lid.
Without sterilization
You can prepare compote without sterilization. For example, a 1.5-liter jar will require the following products:
- 350 g berries;
- 200 g granulated sugar;
- water to fill the vessel.
There is no need to sterilize the jars; just wash them well in warm water. Place the berries in a jar, pour boiling water over them and leave to steep for 15 minutes - during this time the fruits should soften a little. Then pour the water into a saucepan, add sugar and boil until the sugar is completely dissolved.
Add citric acid to the jar using the tip of a knife and fill it with sugar syrup. After that, roll it up with a lid and turn it upside down.
Sugarless
You don't have to add sugar during the cooking process. But if you cook without sweeteners, the drink will turn out too sour. Therefore, it is recommended to add honey. For 1 kg of fruit you need to take 500 ml of water and 500 g of honey.
In a slow cooker
In order to cook dogwood compote in a slow cooker, you need the following ingredients:
- 200 g of fruits, you can take fresh or dried berries;
- 1 apple, you can also use dried fruits;
- 2 liters of water;
- 0.5 cups granulated sugar.
Wash the berries well, wash and chop the apple too. Place them in a multicooker bowl, add sugar and pour warm water. Turn on the “Stew” mode and cook for 30 minutes. Then simmer for another half hour in the “Heating” mode. If desired, you can add mint leaves, lemon balm and other ingredients to the drink.After this, turn off the multicooker and leave to steep for a while so that the fruits soften. This compote can be consumed immediately or stored for the winter.
With double filling
To prepare such a drink, the same ingredients are used in a three-liter jar. You just need to cook the compote differently.
Pour boiling water over the dogwood and leave for 10 minutes. Then drain the water and boil it, add sugar and cook until it dissolves. Pour syrup over the berries and roll up.
With triple filling
In this case, it is prepared in the same way as in the previous recipe. You just need to drain and boil the water not once, but twice. In this case, granulated sugar is added a second time. The syrup must be poured into a jar and closed with a metal lid.
With citric acid
To increase the shelf life of the drink, it is recommended to preserve it with citric acid. To do this, you need to add the following ingredients (per three-liter container):
- 350 g berries;
- 300 g granulated sugar;
- 2.5 liters of water;
- 1/3 tsp. citric acid.
Sterilize the jar, pour berries and sugar into it, add citric acid. It is not recommended to replace it with lemon juice, as it can affect the taste of the finished drink.
Boil water and pour it into the jar in small portions so that the glass does not crack. Then roll it up, turn it upside down and wrap it in a warm blanket.
With pear
Pear gives the drink a very delicate taste. To prepare it you will need the following components:
- 400 g pears;
- 150 g dogwood;
- 1.5 cups sugar;
- 2.5 liters of water;
- 1 tsp. citric acid.
The above ingredients are for a three-liter jar. It is necessary to take hard pears, otherwise the pulp may boil and the drink will be cloudy.Cut the fruit into thin slices, place it on the bottom of the jar, add dogwood and sugar, citric acid. Boil the water for 5 minutes after boiling, then fill the vessel with boiling water and immediately roll it up.
With quince
The quince must be ripe and sweet. It must be taken in the same quantity as dogwood. For 600 g of fruit, approximately 450 g of sugar and 2.5 liters of water are required. Prepare in the same way as in the recipes above.
With grapes
For this recipe you need to take:
- 350 g grapes;
- 320 g dogwood;
- 1 cup granulated sugar;
- 2 liters of water.
You can use white grapes. But to obtain a more saturated color of the drink, dark berries are added. Grape branches can give the compote a tart taste, so it is better to use only grape berries.
You can cook with one or two fillings. In the first case, it is necessary to add citric acid.
With plum
For 1 kg of dogwood you need to take 10-12 medium plums, a glass of sugar and 2 liters of water. Pour water over the fruits and simmer on low heat. Cook for about 20 minutes after boiling, then add sugar and boil for another 5 minutes. Pour the finished drink into a three-liter jar and roll up.
With raspberries
To prepare the compote, the following ingredients are required:
- 1 kg raspberries;
- 1 kg dogwood;
- 1.5 kg granulated sugar;
- 2 kg lemon juice.
Prepare sweet syrup - dilute sugar with 200 ml of water. Pour syrup over the berries and leave for several hours so that the raspberries release their juice. Add a few liters of water, depending on the desired concentration of compote. Boil for 30-40 minutes, then pour into jars and roll up the lids.
With apples
Compote with apples is prepared according to the same recipe as with pears. Apples must be firm and sweet. Winter varieties are better suited for preservation.
Methods for storing compote
The drink must be stored in the basement or in the refrigerator for no longer than 2 years.
