It is being replaced by the time for delicious preparations, and cucumbers canned with rowan for the winter will be a wonderful addition to both the daily and holiday tables. Vegetables prepared together with berries acquire a pleasant, unusual taste that even demanding gourmets will appreciate.

Canning requires simple ingredients. These are cucumbers, rowan, garlic, allspice, sugar, salt and vinegar.
Preparing vegetables and berries
Before canning, it is advisable to keep cucumbers in water for at least 4 hours. The berries must be washed thoroughly. This is all that needs to be prepared from the products for further processing.
Recipes and step-by-step instructions for preparing snacks
As you know, rowan can be red and chokeberry. Therefore, recipes for preparing canned cucumbers with these berries are somewhat different.
Classic version of cucumbers with rowan bunches
According to the traditional method, to make canned cucumbers with the addition of rowan, vinegar is not needed, since rowan contains a sufficient amount of acid. Follow these steps:
- Take 1 kg of vegetables and 2-3 sprigs of berries per 2-liter jar.
- For the marinade, prepare 0.7 liters of water, ¾ cup sugar, 20 g salt and 5 allspice peas.
- Cucumbers placed in sterile jars should be poured with boiling water twice, and on the third - filled with marinade and closed with sealing lids.
If desired, you can add bay leaves, horseradish leaves, cherries, grapes, currants.
With red rowan
For the preparation you will need:
- 2 kg of tomatoes and 5 bunches of berries per 3-liter jar;
- 1.3 liters of water, 1 glass of sugar, 1 tbsp. l. salt for marinade.
Vegetables should be washed thoroughly, cut off the ends and placed in a container, alternating with berries.
Next, you need to dissolve salt and sugar in water and boil the mixture. Filling is done with brine three times. After this, the jars can be rolled up and left to cool upside down, wrapped in a warm cloth.
With chokeberry
To close cucumbers with chokeberries for the winter, follow this recipe:
- put berries in jars (without branches);
- add a few cloves of garlic and allspice peas;
- add cucumbers;
- Fill the container with boiling water, cover with a lid and hold for about 15 minutes;
- prepare an infusion of sweetener, water and table salt, add vinegar and water from jars to the mixture;
- Boil the brine and then pour it into jars.
At the final stage, seal the jars and leave them to cool, wrapped in a blanket.
Cucumbers prepared according to this recipe are suitable for preparing side dishes, appetizers, salads, and all kinds of canapés.
Since canning takes place without sterilization, the vegetables remain crispy.
Pickled cucumbers with rowan
To prepare pickled cucumbers with rowan, only the red variety of berries is used. For a 2-liter jar, take about 1.5 kg of vegetables, which are pre-soaked in water for 8 hours, changing the water once. Place the cucumbers in a jar and pour in marinade prepared from 1 liter of water, 1 tbsp. spoons of salt and 3 tbsp. spoons of sugar. Add ¼ cup of 4% apple cider vinegar to this.
Canned cucumbers with berries
Instead of rowan, cucumbers can be wrapped with other berries, for example, currants, cranberries, cherry plums. However, in all these cases, vinegar should be added, using the classic recipe as in the case of chokeberry. The only exception is canning cucumbers with cranberries, since this berry, like red rowan, provides enough of its natural acid.
Recipe without vinegar
Natural acid can perfectly preserve vegetables, allowing them to be stored like regular preparations with vinegar. When canning, take half a kilogram of berries per three-liter jar.Otherwise, the recipe is exactly the same as the usual canning method. Instead of rowan, you can use sorrel, sour apples or lingonberries.
Serving rules
Canned foods can be served in different forms. You can add sunflower (olive) oil, herbs, and spices to them. Sometimes housewives use such preparations as ingredients for preparing various dishes (for example, Olivier salad).
How long are blanks stored?
Rolled up jars can be stored for quite a long time. But it is advisable to eat them in the winter of the same year when they were closed. They will not deteriorate next winter, but they may lose their taste.
