A large amount of the recipe contains vinegar; it can be replaced with lemon juice or tomato paste. Such salads have a sweet taste, which is complemented by other ingredients depending on preference (spicy, wine).
Ingredients for cooking
To prepare pickled cucumbers with peppers and onions you need to prepare:
- small cucumbers about 1.5 kg;
- onions – 4 pcs.;
- bell pepper red or yellow - 4 pcs.,
- fresh herbs (dill, parsley, rosemary);
- currant and cherry leaves for flavor.
Selection and preparation of vegetables
Fresh, small cucumbers of the same size are suitable for pickling (they are convenient to put in jars and look more beautiful). First, you need to carefully wash the vegetables to remove dirt and sand, cut off the tails, and remove the seeds from the peppers. Pickled cucumbers acquire a special taste when various dried or fresh herbs, roots, and leaves are added to the pickling. The aroma of the preserve depends on their quantity. However, the marinade in which the vegetables are placed will determine the taste of the dish. The marinade for preparing pickled cucumbers with sweet peppers and onions consists of only three ingredients and two liters of water.
Marinade recipe:
- 7 tbsp Sahara;
- 3 tbsp. salt;
- 180 ml vinegar 9%.
Step-by-step snack recipe:
- Cut the onion into half rings. Cut the pepper, remove the seeds and cut into small strips along the fruit.
- Place vegetables in a container in balls, alternating them in the order indicated: cucumbers, peppers, onions.
- Fill the jars to the top, pressing firmly with your hand.
- Boil clean water and pour it into jars. Cover the top with metal lids for preservation.
- Let stand for about 20 minutes.
- Pour the water back into the pan and boil again. Repeat this action three times. After this, add the other ingredients for the marinade and bring the liquid to a boil.
- Fill the jars with marinade and cover with a lid.
- Turn over and wrap in a blanket.
- Let stand until completely cool.
- Delicious and crispy cucumbers are ready!
Further storage
Vegetables prepared in jars in this way should be stored in a dark and cool place. It is necessary to ensure that the container is tightly closed and well sterilized, then the preservation will be stored for a long time.
