Artek cereals have their own subspecies. They depend on the size of the cereal particles, but they have a common characteristic - yellow color and a pleasant wheat aroma.

There is no such name in GOST, so there are no special requirements for the product. This is just an additional characteristic indicating that the grains of the wheat variety with the same name are used in the production of cereals.

When making Arnautka, a hard variety of cereal is used. In this case, the wheat must certainly be spring and glassy. It is for this reason that the cereal has a yellowish color.

Arnautka is best suited for making porridges. In terms of its nutritional value, it does not differ from the cereal varieties Artek or Poltavskaya.

  • the grains are boiled until tender or doused with steam;
  • the raw material is dried, as a result of which its surface becomes wrinkled and its color becomes darker;
  • the wheat is slightly moistened, then the dense shells are removed from its surface;
  • The second drying stage is carried out, thanks to which the bulgur gets its unusual nutty taste.

Then the bulgur is crushed and sifted, after which it is only packaged and sent to store shelves.

The grain sizes can vary from whole grains to small particles. The product is perfect for making porridges, soups, salads, and lamb meatballs.

Couscous

This cereal is prepared from semolina, which was obtained from durum cereal varieties. During production, the cereal is moistened, sticks together into small lumps - and “wheat” is formed, which is called couscous. The product undergoes additional processing aimed at removing unnecessary particles and dust. This cereal is sprinkled with flour or semolina, and then sifted.

The grains are quite miniature in size. They reach 2 millimeters in diameter. Some compare them to rice grains, others to small pasta.

Couscous makes delicious side dishes that go well with vegetables and meat. To make the porridge crumbly, it is better to steam it.

Spelled is the name given to a whole group of soft wheat varieties. Spelled is one of the varieties of spelt. The cereal produced from them is characterized by the presence of a large number of films that are not threshed during processing.
