It doesn’t take much time to prepare, and the result will exceed all expectations. There are many recipes for healthy dressing for hodgepodge.
Classic recipe
Dressing option for approximately 16-20 servings of soup.
It will require the following ingredients:
- carrots – 2-3 pcs., the quantity depends on the size of the fruit;
- cucumbers – 2 kg;
- onions – 1-2 heads;
- sunflower oil – 120 ml;
- sugar, salt - 1 tbsp. l.;
- vinegar - 3 tbsp. l.:
- spices to taste.
To prepare the dish, you need to cut all the products into equal cubes, fry the carrots and onions, add the rest of the ingredients and simmer for 40 minutes over low heat. Then remove the dish from the heat, place it in a jar and add vinegar.
Cover the dressing with a hot lid.
With eggplants
To the classic recipe you need to add 1.5-2 kg of eggplant, cut into large cubes. They must be salted, washed, and then squeezed. You need to add vegetables at the same time as the cucumber.
With rice
The recipe requires 350 g of white rice. Rice washed with running water is boiled and added to the dressing 5 minutes before the entire dish is ready.
With mushrooms
Mushrooms in the recipe are used instead of cucumbers, taken in the same quantity, and prepared in the same way. Any forest mushrooms are suitable - porcini, russula, honey mushrooms, boletus.
With tomatoes
Ripe tomatoes are first doused with boiling water and then doused with ice water. Then remove the skin from them and grate them on a fine grater. They must be added along with cucumbers. For dressing you need about 1 kg of tomatoes.
With beets
A kilogram of beets is grated on a coarse grater and added after onions and carrots.Otherwise, the recipe is no different from the classic preparation.
With bell pepper
Fry a kilogram of bell pepper with onions and carrots. Then everything is done according to the classic recipe.
With champignons
Champignons will also be a suitable ingredient for dressing, but it is better to mix them in equal proportions with wild mushrooms. This way the taste will be richer.
With tomato paste
Tomato paste is added at the end when dressing according to the classic recipe. Literally 5 minutes before readiness 2 tbsp. l. The pastes are mixed with all the vegetables and covered with a lid.
From cucumbers
Cucumbers are included in the classic recipe for winter preparation, but if desired, their quantity can be adjusted to achieve the desired taste. It all depends on the preferences of the cook.
Storage rules and periods
Before long-term storage, the dressing is placed in the refrigerator for 2 hours, and after that it is placed in a freezer with a temperature below 18 degrees. Its shelf life is 6 months.
