Preparation of products and containers
Before canning, zucchini should be sorted, stems and inflorescences removed, and then washed thoroughly. Further processing depends on the cooking method:
- for pickling, you need to prick them with a fork before filling the jars;
- for simple canning - keep in boiling water for 3 minutes;
- Before stuffing, peel and core vegetables.
The containers also require preparation (washed and steamed in the oven or in a water bath for 15 minutes).

Zucchini can be pickled in various forms. Not only the appearance of the product, but also its taste depends on how the vegetables are cut. This is due to changes in the degree of salting and saturation with spices.
Zucchini slices in liter sterilized jars
To prepare three liter jars you will need:
- zucchini – 2 kilograms;
- garlic – 9 cloves;
- black pepper – 18 peas.
For the marinade you need to combine 1.2 liters of water, 2 tablespoons of salt, 3 tablespoons of sugar.
For preservation, prepared zucchini are cut into rings up to 2 centimeters thick and placed in jars. A clove of garlic and a few peas are added to every third of the installation.
The marinade is cooked on fire for 3 minutes, after which it is poured into each jar. Fill each of them in a third - this will prevent damage to the container from boiling water.
Filled jars are filled to the top, covered with lids and sent to a pan for sterilization. The prepared containers are rolled up and turned upside down.
Zucchini in thin strips
Pickled zucchini, cut into ribbons, makes it possible to prepare various dishes in winter. For uniform stripes, use a special vegetable knife.
To create the thinnest slices, you will need a vegetable cutter. It needs to be led from one end to the other. The resulting strip is rolled into a tube and placed in jars. Vegetable rolls are filled with boiling water, which after 10 minutes is poured into a container. Add the ingredients necessary for the marinade and boil for 3 minutes. The jar is filled to the very top. The container is twisted and wrapped.
Zucchini marinated in this way remain elastic, so they can be used to make filled rolls at any time of the year.
Cubes
Cubes of zucchini are marinated with vegetables. Onions, carrots, garlic and dill are chopped. Salt, water and sunflower oil are added to the vegetable mixture, after which it is simmered for one and a half hours. Then the herbs and tomato paste are added to the container and placed in the oven for another 20 minutes. The hot vegetable salad is placed in sterilized jars, covered with lids, and rolled up.
Pieces
Vegetables can also be cut into pieces. They can be large, as tall as a jar. The process of pickling zucchini pieces consists of several stages:
- Pour spices into the bottom of the jars.
- Filling containers with chopped zucchini.
- Making brine from water, salt and sugar.
- Adding vinegar to jars.
- Filling the zucchini with boiling brine.
After this, the jars are placed for sterilization and rolled up.

Two-liter jars are convenient for canning zucchini, cut into slices. To prepare such a preparation, you need to cut the vegetables into “columns”, and chop the bell pepper and chili. Grind the garlic in a meat grinder.
Place the zucchini in a container, add salt, sugar, oil, tomato paste, pepper and garlic. Boil the vegetables for half an hour. Five minutes before the end of cooking, add vinegar. Place the workpiece in jars, sterilize and roll up.
In slices, like milk mushrooms
You can use a recipe for making zucchini, which tastes like pickled milk mushrooms. For this purpose, you should cut the vegetables into large cubes. Cut the carrots into circles, and the pepper into bars. Grind the head of garlic in a blender. Finely chop the greens. Combine the ingredients in a large container and leave to marinate for 2 hours. During this time, the zucchini will release juice.
The resulting mixture is placed in sterile jars along with the liquid, covered with lids and sent to the fire for sterilization. Then the jars are rolled up and turned over, wrapped for a day.

Workpieces will only be preserved if stored correctly. A cool place that is sufficiently dry and ventilated is suitable for this purpose.
