Gooseberries contain many vitamins, organic acids, micro- and macroelements, which the human body lacks in winter. Therefore, all housewives should have the secrets of making delicious, beautiful and aromatic gooseberry jam, with uncooked, whole berries. This delicacy is universal in use and is suitable for both simple home consumption and as a spectacular dessert at holidays.
How to choose and prepare the main ingredient
Gooseberries are carefully sorted, immediately discarding rotten, spoiled or completely green berries, as well as plant debris (leaves, twigs, dried fruits). For recipes that require preserving the shape of the berries in the finished product, choose dense, slightly unripe fruits. Afterwards, their stalks are cut off and washed well, and the jars are pre-sterilized.

How to properly store winter preparations
Gooseberry jam that has undergone minimal heat treatment is stored only in dark, cool places. Home refrigerators and winter-free cellars and basements are suitable. The temperature during storage of such preparations should not exceed +10...+12 C degrees, the shelf life in this case is from 6 to 12 months.
Jam that has undergone prolonged heat treatment and rolled into sterilized jars can be stored in the home pantry. Then the blanks do not lose their quality for 1-2 years.
