Although all varieties of cherry plum are suitable for making a drink, it is best to give preference to hybrids with a high sugar content in the fruit.

During the process of preparing an alcoholic drink, it is necessary to eliminate the pectin contained in the fruits. This also promotes active juice secretion. To do this, pectinase is added to the wort. If you cannot purchase this substance, you will have to ferment the puree yourself.

Depending on the temperature and yeast activity, fermentation lasts for 20-50 days. If the fermentation process has not ended after 50 days, then the drink will need to be drained in such a way as not to mix it with the sediment. Typically a tube is used for this.

Making cherry plum wine at home is not as difficult as it might seem at first glance. The main thing is to find a good recipe.

What products you will need:

  • cherry plum;
  • 3 liters of boiled cooled water;
  • raisin;
  • sugar (300 g per 1 liter of resulting juice).

How to do:

  1. Sort out the fruits. There is no need to wash them; natural yeast, which is contained in all fruits, should remain on the peel.
  2. Mash the fruit with your hands or a masher. The main thing is not to crush the seeds, otherwise the drink will be bitter.
  3. Mix the mixture with raisins. Pour in water and stir.
  4. Wrap the neck of the bottle with gauze.
  5. Place in a room with a temperature of +18 to +27 degrees. It is advisable to stir the mass up to 3 times a day.

After about 3 days, active fermentation will begin. After this has happened, drain the fermented juice from the sediment, squeeze out the remaining peel and pulp. Pour the juice into the prepared container, add sugar. The jars need to be filled ¾ full.

Put a glove pierced with a needle on the jar. Transfer the jar to a warm place. When another 3 days have passed, add the remaining sugar (100 g). Drain 300-400 ml of wort, mix it with sugar and drain again.Repeat again after a week.

Then carefully pour off the wine so that it does not mix with the sediment. If desired, add more sugar and a little vodka. Pour into jars and re-glove for 10 days if sweetener has been re-added. Remove the containers with the drink for 45 days.

  • 1.4 kg sugar.

How to cook:

  1. Remove the seeds from the cherry plum, put the pulp in a saucepan, add water (200 ml of water per 1 kg of fruit).
  2. Cook over low heat for 20 minutes, without bringing the liquid to a boil.
  3. Then separate the pulp, mix 1/3 of the sugar with a small volume of the resulting liquid.
  4. Pour it into the total mass.
  5. Pour the wort into the bottles to ¾ volume, then add the starter.
  6. Seal the bottle with a cotton stopper and put it in a room with a temperature of +20 to +23 degrees.
  7. Every three days add sugar in equal quantities to the drink.
  8. When the wine stops fermenting, the bottles are placed under a water seal for 25 days.

  • 6 g citric acid;
  • 3 kg granulated sugar;
  • 5 liters of water;
  • 3 g yeast feed.

How to cook:

  1. Do not wash the cherry plum, remove the seeds and puree it in a blender.
  2. Cover the container with the berry mixture with gauze and place in a warm place for 2-3 days.
  3. When foam begins to appear, the juice is drained and the berry mass is squeezed out.
  4. Add water, half the sugar, citric acid and top-up to the juice.

  6. After 2 weeks, drain the liquid from the remainder, add sugar and the second part of the top-up.
  7. Put the glove back on for 2-3 weeks. Then repeat these steps.

What do you need:

  • 3.5 kg of ripe cherry plum;
  • 1.5 kg sugar;
  • 4.5 liters of water;
  • wine yeast;
  • pectinases.

How to cook:

  2. After 3 hours, add the second part of the water and pectinase.
  3. Cover the container with gauze and leave for 2-3 days in a cool place.
  4. Then the liquid must be brought to a boil and immediately removed from the heat.

Add yeast and topping. Close the container with a water seal. Leave the wine for 1-1.5 months. During this time, the fermentation process must occur. Then the drink is poured into another container without stirring the sediment. When fermentation is over, pour the wine, separating it from the sediment layer. Add vodka and sugar to the drink to taste. Send the wine for 1-3 months so that it “ripens”.

  5. Then add sugar to the juice. Close the bottle with a water seal. Leave for 15-45 days.
  6. When sediment appears, the drink must be carefully drained. Leave the wine to steep for 40-90 days.

Period and rules for storing the drink

Homemade wine can be stored in plastic bottles for no more than 3 months. It can be stored in glass jars or bottles for up to 1 year. If you seal the jars, the wine can be stored for up to 5 years. It is recommended to keep the drink in a cool place away from sunlight.
