Delicious and unusual wine can be made from blackberries. There are many simple blackberry wine recipes that can be easily made at home. The main thing is to be patient, because this is a rather long process.

Blackberry wine was first made in Serbia. True, the exact date of manufacture cannot be determined.In Serbia, such alcoholic drinks were made exclusively for home consumption.
According to one legend, on his deathbed one winemaker said to his son, “I taught you everything I knew, but in the end I’ll say one more thing: wine can be made from grapes.” From this legend it is not difficult to assume that wine in Serbia was made from almost all berries and fruits.
Subtleties of preparing the drink
Any variety is suitable for preparing any of the recipes. It is best to use very ripe or overripe fruits. You can use both wild blackberries and domestic varieties. The skin contains a large amount of wild yeast, thanks to which fermentation takes place actively. The berries make very tasty sweet and strong wines.
How to make blackberry wine at home
The best recipes that you can prepare at home.
The simplest recipe
What products are required:
- 2.5 kg blackberries;
- 1 liter of boiled water;
- 1.5 kg granulated sugar;
- 65 g raisins.
How to cook:
- Crush the berries with your hands or a masher. It is forbidden to wash them.
- Place the mixture in a glass container with a narrow neck, add raisins and add 500 g of sugar.
- Mix the mixture thoroughly, cover with a lid and put the container in a warm place.
- The room temperature should be from +22 to +25 degrees. The mass is stirred once a day.
When active fermentation begins, the juice is drained and the pulp is squeezed out. Add 400 g of sugar and mix thoroughly. Place a water seal on the bottle and put it in a warm place. After 3 days, add another 400 g of sugar, after stirring it in a small amount of juice.
After 40-50 days, the liquid will stop fermenting, the sediment will fall to the bottom, and the drink itself will be lighter. If the wine is not very sweet, you can add more sugar.To make it stronger, add alcohol or vodka. After this, leave it for another 12 days.
Caramel-blackberry version
What products are required:
- 7 kg blackberries;
- 2 kg granulated sugar;
- 1.5 liters of boiled water.
How to cook:
- Squeeze the berries. Heat the water to 35 degrees.
- Mix juice and water. Leave for 3 hours.
- After this, repeat the spinning process again.
- Make caramel from sugar. Mix caramel syrup with blackberry juice.
- Leave for 2 days for the fermentation process to begin. If fermentation has not begun, add a handful of unwashed berries or wine yeast to the drink.
Further, the cooking technology follows the same scheme as the preparation of any other recipe.
Using the “correct” technology
What products do you need:
- 5 kg blackberries;
- 1.3 kg granulated sugar;
- 2 liters of boiled water.
How to cook:
- Crush the berries and mix with 600 g of sugar. Place the mixture in a dark room for 2 days.
- Dilute the juice with water. Then transfer the puree into a large bottle 2/3 of the total volume.
- Close it with a water seal. Remove the container for 2-3 weeks.
- Afterwards you need to squeeze out the pulp, mix the juice with sugar and pour it into a bottle.
- After 4 days, drain through a hose to remove any sediment that has formed.
- After 1-2 months, the liquid should become lighter. You can add sugar again to make it sweeter.
Recipe for Serbian wine with blackberries “Drunk Blackberry”
What products do you need:
- 3 kg of berries;
- 1.5 kg granulated sugar;
- 1.7 liters of water;
- raisin.
How to cook:
- There is no need to wash the berries. Turn it into puree, add raisins and 1/3 of the sugar.
- Stir, cover the container with gauze and put it in a warm room for 3 days.
- Then squeeze the pulp out of the juice, add 600 g of sugar.
- Pour the juice into the bottle, filling it 2/3 full. Cover with a water seal.
- After 2 days, add the remaining granulated sugar. Leave for 30 days.
- When the drink stops fermenting and becomes lighter in color, it is drained through a hose to separate it from the sediment that has fallen.
Without water
To make the taste more intense, do not add water during cooking. For this recipe you only need berries and granulated sugar. Mash the berries and leave for 3 days. Afterwards you need to squeeze out the juice, add the sweetener and install a water seal. After 10 days, add another 1 kg of granulated sugar. When fermentation stops, you can add more sweetener to taste and leave the bottle in a dark place for several days.
With honey
What products do you need:
- 2 kg of honey;
- 1 kg granulated sugar;
- 3 kg blackberries;
- 3.5 liters of water.
How to cook:
- Do not wash the berries, immediately mash them into puree. Pour some water into the puree, cover with gauze and leave for 3 days. By this time, fermentation should begin.
- After this, separate the juice from the pulp, cook syrup from honey and sugar (1 l), add it to the juice.
- Pour immediately into a large bottle, cover with a water seal and put in a warm place for 40-45 days.
- When this period has passed, drain the drink through a hose to separate it from the sediment.
- Cover the container with a water seal again and leave for 7 days. After this, drain the wine from the sediment again.
With raspberries
Making blackberry-raspberry wine couldn't be easier. You can make the drink according to the traditional recipe for blackberry wine, only you will need to immediately mix the fruits and crush them into a homogeneous mass. After that, do it using standard technology.
With raisins
Raisins are often used for cooking to make fermentation more active. Raisins are poured directly into blackberry puree. Then the wine is prepared according to the standard recipe.
With cognac
In order to make blackberry wine with cognac, you need to prepare the drink according to a traditional recipe. When it is almost ready (when the sediment falls to the bottom and fermentation stops), you will need to add cognac and stir. After this, leave for another 2 weeks.
Storage rules
The shelf life is 2 years. It is recommended to store bottles in a cool place away from sunlight. Due to high temperatures it may disappear.
