Homemade wine is made from plums, apples, rose hips, apricots, cherries, mulberries. Its composition, unlike a store-bought product, contains only natural substances, no chemical components, and the taste is richer and brighter. Prune wine contains sweetness, a barely noticeable tartness, and a unique aroma. The drink contains a lot of vitamins; consuming it in reasonable quantities can strengthen your immune system, get rid of a runny nose, and speed up recovery from acute respiratory infections.
Cooking features
To ensure that there is no sediment in the wine and the drink has a transparent burgundy color, you need to choose the right plums and a fermentation container that closes tightly. To stir the fruit mass, you will need a wooden or glass spoon. Before laying the fruits, the dishes are washed with water, vinegar and soda, which avoids the absorption of unpleasant odors. Infuse the drink with or without sourdough.
Product selection and preparation

How to make prune wine at home
Sun-dried fruits are cleaned of dust without touching the white coating, rinsed under the tap, filled with water, kneaded after a while, and the seeds are removed from the resulting mass. The plum mixture is diluted and left warm for 2 days. When bubbles begin to appear, the liquid is filtered and poured into another container. Add sugar in parts, put 100 g per liter of dry wine, 300 of sweet wine. Cover the jar with a glove with the holes facing up, and the drink ferments for 2-3 months. To make fortified wine, alcohol or vodka is added before bottling. The volume of alcohol should not exceed 15% of the total amount of the product.
Simple recipe
To make wine, you can use not only dried or dried plums, but also freshly picked fruits.It is recommended to choose varieties with fruits of dark shades, where there is a lot of sugar, but also acids. The bones are best left behind in the “Hungarian”.
Those who have never made wine should start with the simplest recipe, using which they take:
- 1 liter of water;
- 8 kg plums;
- kilogram of sugar.
The seeds are removed from the fruit, pureed, and placed in a glass container. Heat the water to 40–45 °C and combine it with the fruit mixture. The dishes are covered with gauze, left in a warm room, for the first five days the mass needs to be shaken a little.
After 6 days, squeeze out the juice, add sugar, pour into a bottle and install a water dispenser. After 3 weeks, the drink is filtered into another container and sealed tightly. After a month, the filtered wine can be tasted.
Cinnamon
Spices add an original flavor to the drink, but to prevent the product from losing its transparency, powdered additives are not used. Aromatic wine can be made:
- from 2 kilograms of sugar;
- from 5 kg plums;
- cinnamon sticks.
The berries are seeded, ground into puree, combined with 1 kg of sugar, and 2 liters of water are poured. Cover the container with a glove with holes or a purchased dispenser and leave it in a warm place. When the mass has fermented, filter, the liquid is separated from the pulp, the remaining sugar and 3 liters of water are added to it.
Add cinnamon to the resulting syrup and pour it into a glass or plastic container, put the dispenser back in place, and place the container in a dark place. After a month and a half, the bottles are filled with the drink and kept for the same amount of time.
With raisins
Not only delicious wine, but also medicine to improve digestion, strengthen capillaries, and improve immunity can be prepared from a bucket of prunes:
- Place the fruits in a bowl, pour in 5 liters of water, and soak the raisins.
- Three days later, the juice is squeezed out of the berries; after removing the pulp, it is combined with the liquid in which the raisins were soaked for 3 days.
- Sugar is poured into the drink and left for fermentation for 2 months.
- Bottles are filled with filtered wine.
The almost finished product is sent to the refrigerator for 8 weeks. Raisins are rich in potassium, which is essential for heart function. Plums speed up the digestion of food.
With other dried fruits
A beautiful shade and original notes are given to the drink by dried apricots, which, like raisins, are soaked in warm water and then ground together with plums. Juice is squeezed out of the fruit mass, sugar is added and left to ferment in a warm place. After 2 months, the drink is filtered and filtered, and bottles are filled with it.
Sugar can be taken in a ratio of 1 to 3; 12 kg of dried apricots and 5–6 kilograms of plums are required.
Storage conditions for homemade wine
