Goat milk is a healthy drink that is consumed to improve health and immunity. Its composition contains a group of vitamins, minerals, and nutrients. Fermented milk products are made from milk: cheese, butter, cottage cheese and kefir. The latter of these is obtained by fermenting bacteria in milk. The process of producing kefir from goat milk takes place in an industrial environment. Any housewife can prepare a fermented milk product at home.
Is it possible to make kefir from goat milk?
Kefir product can be bought at any supermarket or store. But you don’t always come across goods of good quality and freshness. In production, starter or kefir grains are added to milk to speed up the fermentation process. The fermentation process makes the product not only tasty, but also beneficial for the human body.
A high-quality goat product has a positive effect on the digestive and metabolic processes of the body. The vitamin and mineral composition prevents the development of most intestinal infections. The beneficial properties and quality of fermented milk drink depend on the method of its production.
Goat milk is used to prepare it at home. As a starter, use regular store-bought kefir or low-fat sour cream. A natural product prepared at home is considered more useful, since it does not contain preservatives or other additives.
Necessary equipment
Cooking begins with preparing the products and necessary equipment. For this you will need a cooking thermometer. If you don’t have one at hand, a regular thermometer for measuring a person’s body temperature will do. The thermometer must be washed thoroughly first. Temperature control is important to avoid killing the bacteria in the starter.
To heat the mixture you will need dishes and a stove. It is convenient to use a saucepan or saucepan. Cutlery is prepared to mix the ingredients. Violation of the technology for preparing goat drink at home will lead to its spoilage. If the mixture overheats, a bitter, salty taste will appear. There is also a violation of properties: at elevated temperatures, acidity increases.

Industrial production of kefir
In the 90s, the drink was produced by adding fungi to the raw material. In the process of technology development, we learned how to produce fermented milk products using the tank method, which has been introduced into the modern dairy industry.
The industrial production of kefir occurs in stages:
- Heat treatment and homogenization. Milk is purified to destroy vegetative microflora. At the same stage, deaeration is carried out - eliminating the specific smell and taste from the product.
- Sterilization process. To destroy pathogenic microbes, the procedure is carried out at a temperature of 135-137 degrees, a pressure of 0.5 MPa for 3-4 seconds.
- Cooling and ripening. The product is cooled to the ripening temperature. Ferment made from kefir grains is introduced. Ripening lasts 8-12 hours. At this time, yeast fermentation occurs.
- Mixing and pouring. Before bottling, the drink is stirred for 2-10 minutes.Package and label the product.
- Maturation of kefir. Before drinking, let the drink brew in the refrigerator.
