Milk is a valuable and irreplaceable food product. Any product made from milk is in demand. Fresh goat milk butter is a high-fat product that is absorbed by the body without causing cholesterol problems. In addition, the oil exhibits wound-healing, softening, analgesic, and bactericidal qualities. Therefore, medicinal ointments and cosmetics are often made on its basis.

Fresh butter from goat's milk does not have a pronounced odor, but it has a pleasant sweetish taste with nutty notes.

How to make goat milk butter at home
No special equipment is required to make small quantities of the product. However, it must be taken into account that a lot of milk is wasted during the processing process. The main stages of preparing a creamy product:
- The milk is kept in the refrigerator for at least 6 hours so that the cream forms on the surface of the liquid.
- The cream is collected in a separate container, carefully separated from the milk. The optimal temperature for whipping cream is 8-10 °C.
- Using a mixer, whip the cream until the product of the desired quality is obtained.
The volume of cream collected directly depends on the fat content of the milk. As a rule, 0.5-0.7 liters are collected from a three-liter bottle of cream. Since the cream is well preserved in the refrigerator, it is advisable to collect it over several days (if there are few goats on the farm). Approximately 150 grams of butter is obtained from 1.5-2 liters of cream.
To obtain a more dietary product - ghee - at home, a different technology is used. Main stages of the process:
- The product is chopped into small pieces and placed in a wide container.
- Pour water into a spacious saucepan and place the container in it so as to form a water bath.
- The dishes are placed on low heat. To ensure that the product is slowly heated and does not burn, the fire is kept low.
- The product is boiled until separation: whey settles at the bottom of the melted liquid, and a little foam forms at the top.
The melted mass is removed from the steam bath and left to cool at room conditions (about 2-3 hours). Then the oil is carefully filtered - taken out with a spoon and placed on a sieve or mesh.
How can I use the product?
Naturally, goat butter is, first of all, a valuable and nutritious product for preparing dishes and snacks. A wonderful spring preparation is “green” paste, which is added to aromatic boiled potatoes, pasta, and porridge. To prepare, a bunch of greens (parsley, cilantro, dill, basil) are chopped and mixed with soft butter.This is an excellent option for a snack (a sandwich of dried bread is greased with a “green” mixture).
Liver pate is popular, the preparation of which takes little time:
- beef liver, onions and carrots are fried in a frying pan;
- the products are cooled, then crushed in a meat grinder or blender;
- The liver mixture is laid out on the film in the form of a rectangular layer. The top is brushed with goat butter;
- The liver is carefully rolled up and placed in the refrigerator.
For cosmetic use, it is recommended to mix the product with aromatic additives. To care for facial skin, add 2-3 drops of mint, rose, and sandalwood oil to a teaspoon of warm creamy product.
For health purposes, the creamy product is used to lubricate chapped areas of the hands and feet. If you mix the ghee with sugar, you get an excellent diuretic.
Why does butter taste bad?
Reviews about the unpleasant odor of goat milk products are justified. The main feature is that milk after milking should be immediately placed in the refrigerator to prevent the development of a specific aroma in dairy products.
The taste of the products may be affected by the conditions in which the animals are kept. Only if you follow the standards of caring for goats and ensure proper nutrition, you can get tasty dairy products. When preparing butter at home, it is necessary to carefully drain the whey, otherwise over time it is this liquid that can give the product an unpleasant taste and smell.
Vitamins and microelements in goat milk products protect the body from infections, give the skin elasticity, and have a positive effect on vision.But when consuming oil, you should not forget about its calorie content.
