Specifics of preparing raspberry-apple compote for the winter
The method of preparing compote depends on when and in what form it is planned to be consumed: freshly brewed or canned. To prepare a drink for the winter, you will need a specially prepared container, and the brewing process will be more labor-intensive.
List of ingredients
To prepare a three-liter jar of the drink, you will need the following ingredients:
- apples – 3-4 pcs.;
- raspberries – 150-200 g;
- sugar – 200 g;
- water – 2 l.
Product selection rules
Apples and raspberries for compote must be fresh. The presence of rotten and pest-infested specimens is not allowed among berries and fruits. Spoiled raspberries must be removed, and rot from partially spoiled apples must be cut off.
How to prepare containers
To seal compote for the winter, you will need glass jars with tight-fitting lids. Containers must be thoroughly washed with soap and baking soda under hot running water. Then they are rinsed and, together with the lids, placed neck down on a wire rack, under which there is a pan of boiling water.
The container is sterilized in this way for 5-7 minutes, after which the fire is turned off and the dishes are left to cool without removing them on a wire rack over steam.
Remove the cooled jars from the wire rack and place them upside down on a clean cloth. The lids are also laid out on the fabric with the inside side down.
How to cook raspberry and apple compote
Apples must be washed, cut in half and cored. Then the fruits are cut into slices.
Raspberries are sorted and, if necessary, rinsed under running water in a colander. The berries are shaken to remove excess water.
If you plan to drink the compote immediately after preparation, it is prepared in the following way:
- Fruits and berries are placed in a saucepan, filled with water and sugar is added.
- Heat the mixture over medium heat until it boils. After boiling, cook the drink for 3 minutes over low heat, covering the pan with a lid so that there is a gap.
- After turning off the heat, close the pan tightly with a lid and infuse the compote for 20 minutes.
To prepare the winter preparation, raspberries and apples are placed at the bottom of the jar, and sugar is dissolved in water and boiled in a saucepan. The resulting syrup is poured into a jar and covered with a lid. Place the container in a pan with water and sterilize for 7 minutes over low heat. Then it is rolled up and put away for storage.
To make the drink more saturated, you can slightly change the technology of its preparation. Place apples and raspberries in a jar, cover with sugar and pour boiling water up to the neck. The solution must be left for 10 minutes to infuse, and then poured into a saucepan and brought to a boil. The boiling water needs to be poured back into the jar. After this, the container must be closed with a lid, turned upside down, wrapped in a blanket to cool slowly and left overnight at room temperature. After cooling, the container can be turned over.
How to properly store treats
Compote in sealed jars can be stored at room temperature. It is advisable to place it in a cool, dark place. The longer the drink sits, the more rich and concentrated it becomes.
