Lemon is an extremely healthy and tasty fruit containing a large amount of vitamin C. Consuming this citrus during the cold season helps strengthen the immune system and avoid colds. However, keeping lemon fresh for a long time is difficult. To prevent the fruit from losing its beneficial properties and taste, you can preserve lemon with sugar in a glass jar. In this form, citrus turns into a delicious dessert that you can simply eat with tea or prepare baked goods and vitamin drinks with it.
Subtleties of cooking
Preparing lemon and sugar in a jar is extremely easy. To do this, you only need 2 ingredients: lemons and granulated sugar. They can be taken in a 1:1 ratio, or you can increase the amount of sand to taste to a ratio of 1:1.5 - 1:2.
In order for the product to be stored longer, it is necessary to properly prepare the products and containers.
How to prepare lemons?
Fruits for canning must be fresh, ripe, smooth, without dents or punctures. It is recommended to wash citrus fruits under running water, removing dirt from the peel with a brush. You can wash the fruits with soap.
Then the fruits need to be doused with boiling water, after which they should be placed in cold water for 15-30 minutes to get rid of the bitterness. After this, the citrus fruits must be wiped dry with a clean towel or dried on a paper napkin.
Rules for preparing containers
Glass jars are used to prepare lemon in sugar. They must be washed thoroughly and dried with a clean towel. When washing, you can use soap or baking soda.
It is important that there is no water left inside the cans, as well as on the fruits themselves. Even a small amount of it can lead to fermentation of the product.
To keep the product longer, it is necessary to sterilize the container, for example, by holding the jars over steam or pouring boiling water over them.
How to make lemon with sugar in a jar?
There are several ways to candy lemons in a jar.
A simple recipe for the winter
Fruits, without peeling, are cut into circles or slices. The seeds must be removed to remove the bitterness.
Add 1-2 tablespoons of granulated sugar to the bottom of a glass jar. Slices of fruit are placed on top of them in 1 layer.Sand is poured back on top. In this way, fill the entire container to the brim, alternating layers of citrus and sugar. The topmost layer should be sand.
Instead of laying in layers, you can simply mix the fruit with sand in a separate bowl, and then put it in a jar.
After filling, the jar is left for 5-7 days at room temperature; if the container has not been sterilized - for 30-60 minutes. During this time, juice will come out of the citrus and the sugar will dissolve; the layers will sag. After this happens, you should add more fruit and sand to fill the jar to the top. The syrup should completely cover the lemons.
The jar is tightly closed with a lid and placed in the refrigerator for further storage. Periodically, the workpiece should be turned over to better dissolve the sugar.
With ginger
Citrus with ginger is very useful for strengthening the immune system. Consumption of this preparation in autumn and winter can significantly reduce the risk of colds.
To prepare this preparation you should take:
- ginger root (small);
- lemons;
- honey (or sugar).
Peeled ginger root is cut into small cubes. Citrus fruits are divided into quarters. The seeds should be removed.
All ingredients are turned through a meat grinder and then mixed with honey (or sugar). The resulting mass is transferred to a glass container and placed in the refrigerator for further storage.
This mixture should be consumed in small portions: no more than 1 spoon per day in pure form or added to tea.
Through a meat grinder
Citrus fruits are cut into quarters. The bones must be removed from them. The fruits are twisted through a meat grinder, alternating with sand.
The resulting mass is mixed with sand in a 1:1 ratio and left for 30-60 minutes at room temperature so that the juice is released and the sugar begins to dissolve. Then the mixture is stirred again and placed in a glass jar; store the product in the refrigerator.
With spices
To prepare this product you will need:
- lemon - 1 kg;
- granulated sugar - 0.5-0.7 kg;
- ground cinnamon.
Citrus fruits are crushed to a pulpy state. Pour sugar into the resulting mass, add cinnamon and mix thoroughly. The mixture is placed in a glass container and put into the refrigerator for further storage.
Grated lemon with sugar in a jar
The fruits are grated or chopped in a food processor. The resulting mass is mixed with sugar in a 1:1 ratio, transferred to a glass container and refrigerated until consumed.
How and for how long can you store it?
The delicacy is stored in glass jars in the refrigerator or cellar at a temperature not exceeding 0 °C. If the jars are not sterilized before preparing the product, they can be stored for no more than 3 months.
In sterilized, rolled containers, fruit remains suitable for consumption for 6-8 months.
The mixture should not be frozen. When frozen and defrosted, the beneficial properties of fruits are lost.
