Mother-in-laws make tongues from overgrown cucumbers and from young ones. They are placed in cold water for 1 hour, because then it will be easier to wash them and the vegetables will not be limp. Select tomatoes that are large, ripe, and fleshy. You should peel the tomatoes by placing them in boiling water for a couple of minutes, then cut the skin crosswise to remove it easily.
When preparing, you must observe sanitary conditions: the vegetables to create mother-in-law's tongue are taken fresh, washed, dried, cut with a clean knife, placed in sterilized glass jars, and sealed with metal lids.
Prepare glass jars with a volume of 0.5 - 1 l, you can use standard ones with a volume of 0.75 l. They are sterilized for at least 10 minutes. The glass walls of jars can contain a large number of bacteria and microorganisms. Sterilization eliminates bacteria by exposing them to high temperature. If the container is not sterilized, the lids of the rolled-up preparations may swell or the brine may become cloudy.
Wash jars that are not damaged with warm water and cleaning powder. Dry them with a towel. Then you can put the jar on the spout of the kettle in which the water is boiling. Leave for 10 minutes.
Instead, you can use a saucepan with a special lid that has a hole made for the neck of the jar. Pour water into the pan, bring to a boil, cover with a lid, place the jars on top with the neck down, inserting them into the holes, and wait a certain time. If there is no such thing, then you can simply put a sieve on the pan.

Ingredients (for 9 l):
- hot chilli peppers - 100 g;
- cucumbers - 6 kg;
- pepper (Bulgarian) - 1 kg;
- tomatoes - 3 kg;
- garlic cloves - 200 g;
- a glass of apple cider vinegar (6%);
- a glass of granulated sugar with top (250 g);
- 4 tbsp. spoons of coarse salt (80 g);
- 2 cups sunflower oil.
Cooking process:
- Rinse the vegetables.
- Peel the skin from overgrown cucumbers, then cut lengthwise and remove the seeds with a small teaspoon. Then chop it on a grater. Just cut the young ones into thin slices diagonally. Place the vegetables in a thick-walled cauldron.
- Remove the stem from the tomatoes and cut them. Chop all available peppers and remove seeds. Pass through a meat grinder. Pour the resulting puree into the cauldron with cucumbers.
- Pour sunflower oil into the cauldron, add coarse salt and granulated sugar, mix gently.
- Place on the stove over low heat, wait for everything to boil, and then cook for 20 minutes, stirring continuously.
- Pour in apple cider vinegar, cook for 5 minutes, remove from heat.
- Place the prepared snacks into the jars, roll them up with metal lids, and wait until they cool down.
The easiest recipe
The recipe for this prepared snack is simple.
Ingredients (for 6 l):
- cucumbers - 6 kg;
- hot tomato sauce - 1 l;
- a glass of granulated sugar with top (250 g);
- 2 tbsp. spoons of coarse salt (40 g);
- a glass of 9% table vinegar (250 ml).
How to make this most simple recipe:
- Rinse the vegetables.
- Cut the cucumbers into thin long strips using a potato peeler and place them in a saucepan.
- Add granulated sugar and coarse salt to tomato sauce (1 liter). Pour into a saucepan and leave to brew for half an hour.
- Place the pan on low heat and simmer for half an hour.
- After 25 minutes, pour in the vinegar, stir thoroughly, and cook for another 5 minutes.
- Place the finished salad in sterilized jars. Roll up with metal lids. Place the jars on the table with the lids down and wait for the salad to cool.
The taste of this dish will be different depending on what tomato sauce is used. It is better if the sauce is very hot and spicy.
Mother-in-law's tongue with cucumbers and sweet peppers
Ingredients (for 6 l):
- cucumbers - 3 kg;
- tomatoes - 1.5 kg;
- bell pepper - 4 kg;
- hot capsicum - 100 g;
- garlic cloves - 100 g;
- 2 tbsp. spoons of coarse salt;
- 8 tbsp. spoons 6% apple cider vinegar;
- 1 cup sunflower oil.
Cooking process:
- Rinse the vegetables.
- Place the tomatoes in boiling water, peel off the skin, and cut into small squares. Place 1.5 kg of tomatoes at the bottom of the cauldron, pour in 1 glass of sunflower oil.
- Take 3 kg of cucumbers, cut them into thin strips or circles. Place them on top of the tomatoes in the cauldron.
- Remove seeds from peppers. Pass in a meat grinder, add salt. Pour everything on top into the cauldron.
- Place the cauldron over low heat. After boiling, mix everything carefully and cook for another 20 minutes.
- Peel the garlic cloves and crush. Pour the garlic into the cauldron and pour in the vinegar, mix and cook for 5 minutes.
- Sterilize the jars and put the salad in them.
- Cover with lids, roll up, wait for the salad to cool.
The appetizer comes out spicy, spicy and aromatic. The tomato cubes are especially good there.
Mother-in-law's tongue made from cucumbers, peppers, tomato sauce
Ingredients (for 7 l):
- cucumbers - 6 kg;
- sweet pepper - 1 kg;
- hot capsicum - 100 g;
- tomato sauce - 1 l;
- garlic cloves - 200 g;
- a glass of granulated sugar without top (200 g);
- 4 tbsp. spoons of coarse salt (80 g);
- 2 tbsp. spoons plus 2 tsp.spoons 70% vinegar essence.
How to do:
- Rinse the vegetables.
- Take 6 kg of cucumbers, cut them thinly, put them in a saucepan.
- Remove the seeds from the pepper, chop it, and pass it together with the garlic cloves through a meat grinder. Mix the mixture with tomato sauce, add coarse salt, add butter and add a glass of granulated sugar without top. Pour into a saucepan.
- Place on low heat. Boil for half an hour, pour in the vinegar essence, stir, leave for a few minutes, then place in sterilized jars and close them, place on the table, upside down.
- When the salad has cooled, you can place the preparation anywhere where the jars will lie for the winter.
The salad will be an excellent addition to a variety of dishes, such as fish or meat. Preparing such a snack does not take much time, and in the end you will be able to enjoy beautiful, spicy, aromatic vegetables in winter.
