Wash the eggplants thoroughly, cut into medium-sized cubes and soak in cold salted water. Soak the beans overnight, drain the water the next morning and add new water. Cook until done.

  • Black pepper (it’s better to use ground pepper, but peas will also work);
  • 1 tsp. vinegar essence;
  • Several sprigs of dill;
  • A bunch of fresh parsley;

The process of preparing Greek preserves:

Soak the beans for 24 hours in ice-cold clean water. Then change the water and cook until done. Peel the tomatoes (you can soak them in hot water for 2 minutes to make it easier to remove the skin). Immediately after this, they must be immersed in cold water.

Cut the tomatoes into small cubes and fry in a frying pan in 3 tablespoons of vegetable (or olive) oil. Then put the tomatoes in a large saucepan, add beans to them and cook over low heat.

Chop the onion and fry until tender. Peel and grate the carrots. Add to the prepared onion. Then add these ingredients to the rest of the vegetables in the pan.
