Tomatoes with red currants

Let's choose 2 kg of tomatoes of the same shape and size. Wash it in two waters and set it aside to drain. For this volume of fruit you need 1.5 liters of water and jars of your choice:

  2. Two 1.5 liter.
  3. Three volumes of 1 liter.

We take the container of the volume that we have. We wash it with a sponge and soda, rinse it several times, and sterilize it in the microwave. It will take about 10 minutes to prepare the jars. You also need to wash and boil the lids.

Place the tomatoes in jars (jars). At the same time, boil the kettle. Fill the jar(s) with boiling water and cover with a sterile lid(s). The tomatoes will steam for 15 minutes.

Before we start making brine, let’s sort out and wash a glass of red currants. Then I usually boil 1.5 liters of water in a kettle, pour the boiling liquid into a saucepan, and add 2 tablespoons there. salt and 6 tbsp. l. Sahara. I bring everything to a boil.

I drain the water that has cooled for 15 minutes. I add the currants and then pour in the hot syrup. I roll up tomatoes for the winter with red currants instead of a preservative. I turn my preparations upside down and cover them with a warm blanket. In two days I send them for storage.

Marinate tomatoes in blackcurrant juice

Another recipe without vinegar. It can be perfectly replaced by a natural preservative - juice squeezed from black currants. Many housewives use berry juices for canning. To squeeze it, take out a juicer and wash 500 g of berries. At the end we need 300 ml of juice.

A 3 liter jar will take about 2 kg of tomatoes and 2-3 currant leaves. The fruits need to be washed, pricked with a toothpick, and placed in a jar up to their hangers. The jar must be sterile. Pour 1 liter of water into the juice, add 3 tbsp sugar. l. and 1.5 tbsp. l. salt without iodine.

Boil the juice diluted with water and pour it into a jar filled with tomatoes. After 15 minutes, pour it into a saucepan, boil and pour it back into the jar, and so on up to 2 times.

In total, we cook the tomatoes and blackcurrants for about an hour. Turn the twisted jar over and wrap it up.We tidy up the table and look at other recipes.

Add basil to the marinade

Try this recipe with purple basil. The aroma of this preparation alone excites a beastly appetite, but what can we say about the marinade itself? It's delicious and takes very little time to prepare.

Select ripe, medium-sized fruits. In total you will need a little less than 2 kg, because you need to marinate them in a 3 liter jar. First, let's wash the tomatoes and then move on to other vegetables. We will make canning with the following ingredients:

  1. Basil sprigs 3-4 pcs.
  2. Sweet, ripe pepper 1 pc.
  3. Hot pepper pod.
  4. Head of garlic.
  5. Dill umbrellas 3 pcs.

Wash all vegetables and herbs and let dry. Tear off the basil leaves. Peel the garlic, cut into large pieces. Cut the sweet pepper into strips (cubes), remove the seeds and membranes from the hot pepper, and cut into thin rings.

Place a few purple leaves and dill umbrellas at the bottom of the jar. Place the tomatoes in layers, sprinkling them with basil leaves and two types of pepper. Fill the jar filled to the top with boiling water. When it has stood for 15 minutes, pour the water into the pan and fill the jar with new boiling water.

While they are standing, let's make the marinade. Put 1.5 tbsp in water. l. salt and 3 tbsp. l. Sahara. Put the pan on the fire. The water should boil. Drain the water from the tomato into the sink and pour in the boiling marinade. Add 65 ml of 6% vinegar directly to the jar and immediately screw on the lid. Pickled tomatoes prepared in this way have a piquant, pungent taste. Well kept.

Tomatoes with vodka

For a 3 liter jar of vodka you need a little bit, only 50 g. Ripe or brown tomatoes 1.8 kg. Additional ingredients include a little dill and 4-5 cloves of garlic. We will prepare the marinade from 3 tbsp. l.sugar, a tablespoon of salt and 1.5 liters of water.

Vodka will be used instead of vinegar. Prick the washed tomatoes with a toothpick and place them in a sterilized 3-liter jar on top of the dill and garlic cloves. Boil water in a kettle and pour in tomatoes. After exactly 15 minutes, pour it into the pan.

From the drained water, sugar and salt, prepare the filling for the preparation. The brine should boil a little. Pour boiling water into a jar and pour vodka into it. The workpiece is ready. All that remains is to screw on the lid and place the jar under the blanket, bottom up.

Spicy tomatoes in their own juice

Fans of “spicy” foods will definitely enjoy this recipe. Housewives do not have time to process tomatoes when they are actively ripe. Use this recipe and 4 kg of tomatoes will immediately find a use.

Of these, pick half of them as strong small tomatoes, and the other half as overripe lettuce tomatoes. You will need 30 g garlic and two types of pepper:

  1. Ground black.
  2. Spicy bean.

Take the quantity according to your taste. To fill you will need to take 4 tbsp. l. sugar and 1 heaped tbsp. l. salt.

Prick the washed small fruits and place them in sterile jars. Boil water and pour in tomatoes. Drain it after 20 minutes. Chop large tomatoes first with a knife, then with a blender. Add both types of pepper to the sauce before chopping. Boil the resulting mass with salt and sugar and pour into jars. Sterilize 1 liter jars for 15 minutes. Roll up the finished marinade with previously boiled lids.
