Making fig jam - features and secrets
The main rule for the success of obtaining delicious fig jam is the competent collection of high-quality raw materials. The plant comes with black and green-white fruits. The first ones are removed at the moment when they acquire a dark lilac color. The green berries have a slightly yellow tint when ripe. The main criterion for the ripeness of fruits is the ease of their separation from the branch; they should practically fall off the stem.
To make jam, you always need to prepare fresh syrup. The proportions of water and sugar look like 1:0.5; how much to take in each case is determined by individual preferences for sweetness. Figs do not last long, so after picking, you must immediately begin preparing the dessert.
If the recipe for the winter involves cooking, and as a result of cooking the jam turns out to be liquid, then the boiling time is increased slightly.
Preparing figs
After picking, the berries must be carefully sorted and washed. Excess debris, including leaves and twigs, is removed from the collected mass. Each berry needs to be pierced; you should be careful, as wasps may be present in some already burst fruits. To do this, you can use a regular fork; it is recommended to make holes in several places.
A simple five-minute recipe
One of the simplest recipes for making delicacies at home. The advantage of the quick method is that you can eat dessert right away. Peeled berries in the amount of 1 kg are filled with granulated sugar in a saucepan and put away in a cool place overnight. The container is placed on the fire and brought to a boil.To give a fresher, rich taste, add 0.5 lemon and cook the mixture for 5 minutes over low heat with constant stirring. The fire is turned off and after 15 minutes the process of bringing to a boil is repeated. The jam is put into jars and closed.
Azerbaijani-style fig jam
For this recipe it is necessary to peel the berries, but some housewives neglect this requirement.
In order to make jam, you will need:
- berries 3 kg;
- sugar 2.5 kg;
- 1 lemon.
Peeled berries are placed in a deep container and covered with granulated sugar. The fruits should remain in this form until the released juice covers the berries. The time depends on the variety of berries and on average varies from 6 to 12 hours. There is no need to mix figs with sugar.
Next, place the container on the fire and cook over medium flame for 15 minutes. Remove the pan from the stove and wait until the mixture cools completely. Next, the sequence of actions is repeated twice. The total cooking time should ultimately be 45 minutes. Lemon jam should be viscous and not spread on the plate.
The final product yield should be 3 liters. Next, the dessert is placed in jars, with a couple of lemon slices added to each jar.
Fig jam with hazelnuts
This kind of jam is traditionally preferred in Abkhazia. For the recipe you need:
- figs 1 kg;
- sugar 1.5 kg;
- nuts 1 kg;
- water 400 ml.
Prepare syrup from water and sugar in the amount of ½ of the recipe. Peel the hazelnuts if necessary. Make a puncture in each berry and place a nut there.
Place the processed fruits in a saucepan and pour syrup that has cooled until warm on top. Leave the mixture for 12 hours in a cool place.
Bring the berry-nut mixture to a boil, pour off the syrup.Wait until it comes to a boil again and keep it on the fire for 15 minutes, stirring constantly. Pour the remaining amount of freshly prepared syrup into the pan. Leave in a cool place for 12 hours. Boil the jam, skimming off any foam that forms on top. After cooling, the delicacy can be placed in jars.
Fig jam with walnuts
For the recipe you will need 1 kg of sugar and figs, lemon and 5 tbsp. l. walnut. The cooking process is similar to the previous recipe, but before placing the berries in the berries, the nuts are first fried in a frying pan until they acquire a golden color. Lemon is added a couple of slices directly when putting the jam into jars.

This recipe assumes a 2 to 1 ratio of berries and sugar; for longer storage, you can take the ingredients in equal quantities. For the recipe you need:
- berries 1 kg;
- sugar 0.5 kg;
- 2 lemons;
- ground cinnamon, cardamom, ginger 1 tsp each.
Step-by-step preparation procedure:
- cut the figs into pieces, sprinkle with sugar, leave for 1 hour;
- add lemon juice, you can grate the zest to give a richer taste;
- add seasonings to the mixture and place it in the multicooker on high pressure with the valve closed;
- Divide the jam into jars after cooling.

Properly sorted and washed berries are cut and mixed in equal proportions with sugar. The sweet mixture is placed in a slow cooker for 2 hours in stewing mode. After cooking, the jam can be eaten immediately.
Plum and fig jam
Making such jam from plums and figs requires equal proportions. For 1 kg of berry mixture you need 1 kg of sugar.The plums are cut in half and pitted. A syrup is prepared from 400 ml of water and sugar. Place the fruit mixture in a saucepan, pour boiling water over it and bring to a boil. Cook over low heat for 10 minutes from the moment of boiling. Hot jam is immediately poured into jars, rolled up with a lid, turned over and covered with a blanket. After 12 hours, the containers can be removed to storage.
Recipe for figs and oranges
To prepare you will need 600 g of berries, 300 g of sugar, 0.5 orange and a cinnamon stick. The figs are cut into pieces, placed in a pan, a little water is added and sugar is poured on top. The orange is doused with boiling water, the juice is squeezed out of the fruit into the pan, the zest is grated on a fine grater, and cinnamon is added. The mixture is left for 3 hours, after which it is put on fire and brought to a boil, after which it is poured into jars.
Fig and grape jam
Large grape varieties are used for the recipe. It is necessary to cook the jam in compliance with the following proportions of ingredients:
- black figs 650 g;
- grapes 650 g;
- sugar 250 g.
Figs are cut into small pieces, grapes are cut in half, removing seeds if any. The berries are mixed, covered with sugar and left for 12 hours. Next, put on fire, bring to a boil and keep on fire for 5 minutes.
Fig jam without cooking
The berries are passed through a meat grinder or crushed using a blender. The mixture should stand for a couple of hours, after which the released juice is drained. Next, sugar is added to the berries; it must be prepared in compliance with the proportions of 1 to 1 or 1 to 2, depending on how sweet the delicacy should be. This dessert is not stored for a long time, so it is not prepared in large quantities.
Fig jam without sugar
The advantage of this jam is its low calorie content compared to traditional recipes. You can make such a delicacy with a minimum amount of financial costs.
The essence of the method is cooking for many hours, during which excess moisture evaporates and the berry mixture acquires the consistency of jam.
