- raspberries – 2 kilograms;
- sugar – 3 kilograms.
Preparation: first of all, you need to select the right berries.They should be bright red or ruby in color, depending on the variety. The main thing is that the raspberries are ripe, firm and sweet, but preferably not overripe. All spoiled and rotten fruits are immediately discarded, and the stalks of those suitable for making jam are torn off.
Pure raspberries are poured into a basin, a third of the sugar is added and left for 2-3 hours so that they give juice. Then add the rest of the sugar - it is very important that it completely covers all the berries. Then use a wooden (plastic or silicone) spatula to thoroughly mix the contents of the basin. Then take a regular mortar or meat grinder and process the ingredients until smooth.
For convenience and to save time, it is better to use a blender or food processor. The resulting jam is left in the basin for 5-6 hours at room temperature. This is necessary so that the sugar dissolves well. Usually, when preparing in the evening, it is left to steep overnight. In the morning the jam is completely ready. It is consumed both fresh and rolled into jars to enjoy during the long winter.
Option with lemon

It’s not difficult to make: for 1 kilogram of raspberries, take 1.5 kilograms of sugar and 1 large lemon. It is first scalded with boiling water and rolled through a meat grinder, along with the bones and skin. Then the lemon puree is thoroughly mixed with twisted raspberries, and the jam is poured into jars.
With vodka
An unusual, but proven, wonderful recipe.The jam turns out to be exceptionally aromatic; from the smell and taste it seems that these are fresh berries, just picked from the bush and simply poured into a jar. In addition, raspberries retain a rich, beautiful, bright ruby color.
In terms of its taste, such jam cannot be compared with similar jam prepared using cooking. Plus, this preparation also acts as a medicine for frequent winter colds.
The secret ingredient is vodka, pour 1 tablespoon into jars of jam immediately before rolling. You will need the following ingredients:
- ripe raspberries - 1.5 kilograms;
- sugar – 3 kilograms;
- vodka (40%) – 15 milliliters.
Terms and rules for storing such jam
This jam is stored in a cool or cold, dark place, with temperatures up to +10 C degrees. But the temperature should not fall below zero. Cellars, basements, a home refrigerator or a glass balcony are suitable. In an open jar, in the refrigerator, this jam can be stored for up to 2 weeks without losing its qualities.
