In the fall I like to make preparations from vegetables. It takes a lot of time to prepare. In winter, my happy time of relaxation from dacha worries begins. You take the prepared zucchini and beans from the shelf for the winter and a delicious side dish for meat, sausages, grilled sausages, you’re ready. My cookbook contains not one, but several recipes for hearty, winter salads. Now I will share with you. The first in my rating is squash caviar with beans.
Cooking caviar from zucchini and beans
I try to make caviar from zucchini quickly. I plan all stages so that the preparation time is spent to a minimum.I start cooking caviar with beans. In the evening, I sort out the beans (1 cup) from the garbage, wash them, fill them with water and leave them overnight.
In the morning, I drain the water from the beans, add fresh water and put it on the stove. I add a little salt to the water. Cook the beans until half cooked over low heat for 30 minutes. In the meantime, I’m working on zucchini. By autumn I have a huge number of them growing. Choose any one.
I take those that will not be stored for a long time - with the tails torn off carelessly. Before peeling, I wash it and only then peel it. I cut the zucchini into pieces to make it easier to scoop out the seeds from the zucchini. I rinse pieces of zucchini without seeds and peel and cut them into cubes. You get 3 kg of clean zucchini.
I get to work on the carrots and onions. You need 2 of both. I don’t take small change, but good, large-sized vegetables. I peel, wash, cut the onion into cubes, and grate the carrots on a regular grater. I put 2 frying pans on the stove. On the smaller one I fry carrots and onions, on the larger one I fry zucchini. I grease both frying pans well with vegetable oil first.
I transfer the zucchini and fried vegetables into a large saucepan and add:
- 100 g tomato paste;
- 20 g each of salt, sugar.
Simmer the vegetables for 30 minutes, add ready-made beans, 2 crushed garlic cloves, 30 ml of vinegar, 50 ml of oil (vegetable), stir, simmer for 10 minutes, closing the lid. At this time I prepare the jars (wash, sterilize). I put the finished product into clean jars, close the lids, and send it for storage. Usually the jars are covered with a blanket for several days. I do this too, but not always.
Beans in tomato sauce
Even as a child, I loved beans in tomato sauce. Her mother bought it at the store. I found a recipe for a delicious dish on the Internet and tried to repeat it. The experiment was successful.All my friends appreciated the workpiece. I am happy to share the recipe.
I set 1 kg of white beans to cook. I take out an electric meat grinder. I will chop tomatoes on it. They are needed to make tomato sauce. You need exactly 3 kg. I peel the skin of the tomato. I put the tomatoes in a colander into boiling water for a few seconds, the skin flies off on its own, you just need to help it a little.
I place a large saucepan on the stove. I pour the sauce mixture into it and sprinkle the spices:
- Black pepper;
- Red pepper;
- Sugar 1 tbsp. l;
- Salt 1 tbsp. l;
- Bay leaf 4 pieces.
Add pepper according to your taste. For spicy lovers, you can add a teaspoon at a time. I cook the sauce for 30 minutes. Place the finished white beans in a saucepan and simmer for 10 minutes. While the preparation arrives, I wash the half-liter jars, sterilize them, and arrange the beans in the sauce. I roll up the jars and put them in the cellar for storage. If you don't have a cellar, close the jars and place them on the bottom shelf of the refrigerator.
Delicious zucchini salad with beans
I hope everyone will enjoy this hearty and tasty recipe for winter zucchini and beans. It is easy and pleasant to prepare. Tomato juice – 1 liter I take ready-made, store-bought. For this volume of juice, I peel 3 kg of zucchini from seeds and skins.
I cut the zucchini into cubes. I try to make them the same size. I don’t cut it very thin so that it doesn’t fall apart during cooking. Beans 2 tbsp. I prepare it in advance, first soak it for 8-12 hours, then boil it until almost done.
In addition to beans and zucchini, you need 500 g of sweet pepper. For beauty, you can take different colored peppers: yellow, green, red. I peel the peppers from seeds and membranes and cut them into cubes.
I put all the vegetables in a large saucepan. Add spices (salt, pepper) to taste, sugar 200 g, vegetable oil 1 tbsp. and all the tomato juice. I boil the vegetables for 60 minutes.At the very end I add a tablespoon of vinegar.
I take sterile jars and lids. I pour the winter snack hot into jars and seal them with hermetically sealed lids. I wrap the jars in a warm blanket so that they stay hot longer. In two days I send the jars of zucchini to the cellar for storage for the winter.
Amazing zucchini salad with vegetables
You can make an amazing winter salad from zucchini. You will also need other vegetables for preparation:
- White beans.
- Tomatoes.
- Bell pepper.
- Apples.
Soak 500 g of beans for 6-12 hours, boil, and drain in a colander. Let's start with tomatoes. Let's take 1.5 kg. We will make sauce from them. The skin should be removed. To make our work easier, let's scald tomatoes with boiling water.
We will grind the tomatoes in a blender. Sending the tomatoes into the blender bowl, cut them into 4 parts. Take 4-5 apples for the sauce. After removing the seeds you should get 500 g.
Grind the apples and tomatoes to a puree. Pour the apple-tomato sauce into a saucepan, add 200 ml of vegetable oil, 100 g of salt, 150 g of sugar. While the sauce is boiling, peel and cut the bell peppers into squares. You need 0.7 kg of it in its pure form.
All that remains is to prepare the zucchini. Without skins and seeds you should get 3 kg. Cut the pulp into cubes. Pour all the vegetables into the pan with the sauce. Boil the vegetable mass over low heat for 40 minutes.
At the end of cooking, 15 minutes before the end, add 100 g of chopped garlic, 3-4 minutes before the end of cooking, pour in 3-4 tbsp of vinegar. l. We pour the resulting deliciousness into jars and wait for winter.
