To make cherry jam, use any variety, but it is better to take late-harvest berries that are darker and sweeter in taste. They contain more vitamins and fiber.
It is necessary to pick cherries in your own garden with the stalks. It is important to pay attention to this when purchasing it. The stalk allows you to preserve vitamins and stops the process of fermentation and rotting in cherries.
Preparing containers for the start of the process

A container is placed on the neck of the boiling kettle and treated with hot steam for several minutes.

How to prepare thick cherry jam with chocolate for the winter?
Initially, the berries are washed well with running water, the stalks are removed and cleaned of possible insect larvae.
Cooking sequence:
- Place the peeled berries in an enamel bowl and cover with sugar. Let it brew for 1-2 hours.
- Place the bowl with the fruits in sugar on low heat and bring to a boil. Remove the foam and cook for half an hour.
- Heat 50 grams of cognac a little and mix with a tablespoon of cocoa.
- Add 100 grams of dark chocolate to the warm cooked jam and slowly pour in the cognac and cocoa solution.
- Cook for another 10 minutes.
To thicken the syrup, add 25 grams of gelatin, previously diluted in water, to the jam 4-5 minutes before removing.
Boiling jam is poured into jars. The containers are closed with lids and placed bottom up. Leave until completely cool.
Further storage of workpieces
The shelf life of chocolate-covered cherries stored for the winter depends on the preparation method:
- Jam with seeds should not be consumed 7-12 months after preparation.
- Pitted cherries can be stored for one and a half to two years.
- A berry that has been heat treated for no more than 5 minutes remains edible for six months.
An uncorked jar of jam cannot be kept warm. Should be consumed within 1-2 weeks.
In winter, jars of treats are stored in a cool room with dry air and an average temperature of at least 15 degrees.
