- Freezing. Retains a maximum of vitamins and is suitable for adding vegetables and fruits with almost no restrictions.
- Drying. Usually greens and fruits are dried, but some vegetables can also be dried.
- Canned without sugar in its own juice. A simple way to prepare fruits and berries by simple sterilization.
- Preparation of pureed fruits and berries, sugar-free vegetables with heat treatment.
- Use in the preparation of sweeteners.
How to replace sugar?
Sugar substitutes are actually enough to not make life for a diabetic a complete chore with restrictions. The most common sweeteners are sorbitol, xylitol, there is also a thickener for diabetic jam “Sladis”. All of them allow you to make delicious and sweet preparations. You can make jams, preserves, and compotes with them.
Of particular note is the natural substitute stevia. It is also called honey grass, and it is not only sweet and replaces forbidden sugar, but also healthy.
It is recommended to use it in jam even for healthy people and those who want to lose weight, because stevia has no calorie content at all, although it is 300 times sweeter than sugar. The only thing to remember when using stevia is that it does not caramelize.In other words, it does not thicken the jam; it will be more liquid than usual.
Sugar Free Canning Recipes
Now there are several recipes for preparing delicious and harmless preparations for diabetics with and without substitutes. All recipes require high-quality processing of containers - sterilization of lids and jars.
Pickled cucumbers and tomatoes with stevia
You can pickle tomatoes and cucumbers in one jar at the same time, it’s both tasty and convenient. It is also important that this preparation does not contain acetic acid.
For preservation, you can use stevia extract, but it is more convenient to use ready-made pharmacy tablets with this plant.
Ingredients:
- fresh cucumbers;
- fresh tomatoes;
- greens - dill, parsley, you can add tarragon, other herbs as desired;
- several cloves of garlic;
- currant leaves;
- to prepare the marinade for 1 liter of water 1 tbsp. l. salt, the same amount of lemon juice and 3 tablets of stevia.
Progress:
- The consumption of vegetables depends on the number of cans. Typically, 1.5 kg of vegetables are placed in a 3 liter jar, although the packing density may vary.
- Place currant leaves, vegetables in the jar, don’t forget sprigs of herbs and garlic.
- Pour boiling marinade and leave the contents of the jar to warm up for 10 minutes.
- Drain the marinade and immediately boil it again. Immediately pour into the jar and roll up immediately. This preservation is stored in the refrigerator or cellar.
Strawberry compote
Strawberry compote is prepared with stevia. Here's what you'll need for a liter jar:
- strawberry;
- stevia syrup (prepared in advance at the rate of 50 g of herbal infusion per 0.25 l of water).
We do this:
- Place washed and dried berries to the brim in a liter jar.
- Prepare syrup by combining stevia infusion with water.Pour it into a jar and sterilize for a quarter of an hour.
- Roll up the lid and leave to cool.
Using the same principle, you can prepare compotes with other berries and fruits. For example, with apricots (take 30 g of stevia infusion), with pears and cherries (15 g), with apples and plums (20 g).
Dessert “Fruit in its own juice”
A very useful vitamin product, which is prepared by the old folk method of sterilization in a jar with the addition of berries. The only disadvantage of this twist is that the berries, when sterilized, lose their original appearance and color.
You will need:
- apples,
- apricots,
- cherry,
- raspberries,
- plums
The essence of the preparation is as follows:
- Place some of the berries and chopped fruits in a jar and splash in a little boiled water. Place in a pan of hot water, placing a cloth napkin under the jar.
- As the fruit or berries heat up, they will sink; you need to add new ones until the jar is filled to the brim.
- Sterilize the jar for a quarter of an hour, then carefully remove it without opening it and roll it up.
Blackcurrant and apple jam
The preparation is completely sugar-free, and for those for whom it is not contraindicated, you can then add it to the already prepared jam.
Required:
- 0.5 kg of currants, peeled;
- a couple of large apples;
- 1 glass of apple or currant juice;
- for flavoring, a sprig of mint.
Everything is prepared simply:
- Peel the apples from the seed pods, you can also remove the skin, but it is better to leave it - it contains pectin, which helps thicken the product more.
- Place the apples in a saucepan, pour in the juice and let it boil.
- After boiling the apples for 10 minutes, add the berries and let them cook again over low heat for another quarter of an hour.
- Place mint sprigs in the pan and leave there for five minutes. Remove mint.
- Pour the jam into prepared jars and cover with lids. To be sure, transfer them to a weak water bath for about five minutes. Twist.
Folk recipe with viburnum
The simplest folk way of preparing sugar-free viburnum for the winter is the sterilization method. This is done like this:
- Place the de-tasseled berries into clean glass jars.
- Shake the jar well to compact the viburnum.
- Place on low heat for sterilization.
- The berries themselves are juicy enough to release juice when heated. They will gradually settle in it, and then new ones must be added. A completely filled jar should be closed with lids, but not screwed on, and kept in the bathhouse for an hour. After this, you can seal and store in any cool place.
Jam without added sugar or sweeteners
Any jam can be made without sugar. It’s just that the role of a thickener here will not be caramelization of sugar, but simple evaporation of the liquid, that is, thickening of the juice. Here's how it happens in practice:
- We take any berry or fruit. Let it be, for example, plums.
- Place the plums, cut into halves and pitted, into a non-stick pan. Cover with a lid and turn on low heat.
- As soon as the juice comes out, open the lid and boil the fruit. To thicken jam without sugar, we use the multiple boiling method. Once it cools down, return to the heat, boil and turn off again. Do this until the mass thickens and begins to move away from the walls of the pan.
- Ready? Then put it in jars and roll it up.
Cherry jam
When preparing this jam, any substitute is used; in this case, the consumption of the steviazide sweetener is given. Required:
- 600 g cherries (you can even use frozen ones, it makes no difference);
- 15 g pectin;
- 1-2 tablespoons of sweetener (for those who love sweets, take two, usually one is enough);
- some water.
Cooking:
- Place the cherries in a saucepan and add a little, literally a quarter glass, of water so that they don’t burn right away until they release their juice.
- When the cherry juice appears, add the sweetener and cook for five minutes.
- Sprinkle with pectin. It is better to add pectin little by little, stirring the mixture so that lumps do not form.
- Boil just a little, otherwise the pectin will lose its binding property.
- Close the jars and store in the refrigerator.
Apricot jam with apples and pears without sugar
To make the preparation tasty and sweet, take very sweet, ripe fruits. The quantity is arbitrary. Grind it in a food processor and cook the mixture very slowly until tender, stirring constantly so as not to burn. In total, you need to keep it on the fire for no more than 5 minutes, and then put it in jars and roll it up.
Strawberry jam without sugar with honey
Cooking:
- 1 kg of strawberries, peeled from sepals;
- 1 kg of liquid honey.
Cooking:
- Place strawberries in a saucepan, pour honey over them and place over low heat.
- As soon as it boils, turn it off and wait until it cools down.
- Bring to a boil again and only then put into jars and seal.
Tangerine jam
We prepare tangerine jam using fructose. We take:
- 2 kg of fruit;
- 200 ml water;
- 500 g fructose.
Process:
- The longest thing here is to clean the tangerine slices from veins and connective fibers. Pour water over the peeled pulp, cook for 40 minutes and blend with a blender until smooth.
- Add fructose.
- Boil to achieve the desired thickness.
- Transfer to storage containers and close.
Apricot jam without sugar in its own juice
- Peel a kilogram of apricots, remove the pits, and divide into halves.
- Beat with a blender until smooth.
- Place on the lowest heat and simmer for five minutes.
- Place hot jam into jars, close and roll up.
Raspberries in their own juice
- Place the cleanest and ripest raspberries into small jars and place in a saucepan in a water bath. Don't forget to put a napkin underneath!
- Place on fire and wait until it boils.
- While the water is boiling, add the raspberries, which will settle during the cooking process.
- Boil everything together for 10 minutes in a water bath and, after removing the jars, screw them on.
