The canning process is labor-intensive, so not every housewife wants to take on it. And the choice of different jams in stores is quite wide. But still, twists prepared at home are much tastier. Why not make redcurrant jam for the winter called “Five Minutes”? This recipe will take no more than half an hour, and the dessert turns out delicious, aromatic, and bright.
Features of quick preparation of red currant jam for the winter
If the berry is not sour, then the same amount of sugar will be needed per kilogram of product. But if it is sour varieties, then one and a half times more.
The berries should not be stirred with a wooden spoon, as the jam will turn into jam. The container with the berry mass must be shaken regularly. To do this, remove it from the heat for a couple of minutes, gently shake it and put it back on the fire. During cooking, two such procedures should be carried out.
How to select and prepare ingredients?
Berries should be selected when they are ripe. They should have a beautiful, even red color and elastic skin. The branches of ripe currants are green. Too dry indicates that the berry is overripe. Such currants should be ground through a sieve; you won’t be able to close the berries whole - they will burst under the influence of high temperature.
Before canning, red currants are washed and sorted. Remove all leaves and twigs.
Preparing containers
The simplest option would be to sterilize the jars in a saucepan. Water is poured into it up to half. When it boils, put the lids on, and put a sieve or wire rack on top of the pan. Place dry jars upside down.
Instead of a sieve, you can use a sterilizer. This device has small holes on which containers are placed. 1-liter jars are kept for 8 minutes, 2-liter jars for 10 minutes, and three-liter jars for 20. They finish sterilizing when steam collects in large drops on the container.
Afterwards, the jars are placed to dry, bottom up, on a dry cloth, and the lids are removed there. Canning begins when the container is completely dry.
If you don’t want to bother, the jars can be sterilized over a kettle.They are put on the spout and wait until the steam turns into drops.
Many housewives prefer to cook food in a slow cooker. They make jam in it and sterilize the containers. To do this, pour some water into the bowl and place the lids there. After installing the nozzle for steaming food, place the jars bottom up. Turn on the “Steam” mode. After the water boils, the jars are sterilized in the same amount of time as in the pan.
How to make Pyatiminutka jam from red currants at home?
The jam is prepared quickly. To diversify its taste, add black currants, orange slices with peel or ginger.
Classic recipe “Five Minute”
To use the classic recipe, you should boil the berries, grated through a sieve. To make jam you will need:
- kilogram of currants;
- kilogram of granulated sugar.
Place clean berries in a metal container and sprinkle them with granulated sugar. Leave for 4 hours. This will allow the berries to release juice. Then put on the fire and cook for 5 minutes, skimming off the foam regularly.
Turn off the gas, cover the container with a lid and leave for 12 hours. Then bring to a boil and cook for 5 minutes. Place into jars while still hot.
If you decide to make jam in a slow cooker, then add the berry mixture to a third of the bowl. This way it will not “run away” during cooking. The foam must be constantly removed.
Option in syrup
To prepare this recipe you will need:
- kilogram of berries;
- 1800 grams of sugar;
- liter of water.
Sugar is poured into a metal container and filled with water. Cook this syrup for 10 minutes over low heat. Pour the currants while still hot. Leave to brew for 8 hours. Afterwards, the syrup is drained, brought to a boil, and boiled again.
Pour into a container with berries and put on fire, cook over low heat for 30 minutes. The jam should be stirred constantly.
The finished product is placed hot into prepared jars. Roll it up with metal lids; when it cools down, put it away in a closet or pantry.
With ginger
“5-minute” jam with ginger has a piquant taste. Some connoisseurs of spicy dishes add a little chili pepper to it. But this is optional. This recipe includes:
- 700 grams of sugar;
- half a liter of water;
- 600 grams of red currants;
- 50 grams of ginger (root).
First, prepare a thick syrup from water and granulated sugar. After boiling, add grated ginger root and currants. Cook over low heat, stirring constantly, for 5 minutes.
Storage periods and rules
“Five Minute” jam is put away in the pantry, special cabinet or cellar. The shelf life is 12 months.
